I like the top that uses the setting that you describe as a bow tie block. To me it appears more as a spool block. Not matter the description, it makes an attractive quilt.
For a beginner quilter I think some important information was omitted. How far away the seam from the drawn line for the big square and what size is the small square?

Tip top and floating is my favorite I think. Simple to make but make a cool modern statement! Thanks for sharing.
For tutorial purposes, it would probably be a good idea to use a contrasting thread color
