If you have 1 eggplant, make this light, delicious and inexpensive pasta!
Hello everyone! In this video I propose you an easy and delicious recipe perfect for lunch or dinner. Fresh and light eggplant pasta will appeal to the whole family! A few simple ingredients and 10 minutes of time are enough to prepare a healthy and very tasty dish! For this recipe I used half rigatoni, but you can use any other type of pasta you prefer. Pasta with eggplant, onion, parmesan and fresh parsley is also ideal for vegetarians. Try this simple and delicious pasta and I'm sure you will love it!
Ingrediants:
- 1 onion
- 2 cloves of garlic
- 1 eggplant
- 200 gr of pasta (half rigatoni)
- Parmesan to taste
- Parsley
- Salt, pepper, chilli
- Olive oil
