Ingredients:
● Onion - 1 pc
● Salt, Black Pepper, Parsley
● Vegetable oil for frying
● 2 cloves of garlic
● Eggplant - 2 pcs
● Tomato puree - 350 ml
● Cherry tomatoes ~ 10 pcs
● Cream (10-20% fat) - 100 ml
● Noodles - 200 g
● Parmesan - 20 g

I am in San Francisco. I have made this recipe 4 times since I have seen it! All my family loves it! I usually serve it with a salad of Arugula on the side or just a lettuce, tomatoes and onion with oil. lemon, green onions, lemon juice on the side. It is exquisite even sans salad ! Just found this video and recipe earlier today. I LOVE THE RECIPE! I made it for 2 adults so made a slightly smaller portion, and cooked egg noodles instead, and it turned out wonderfully! What a great side dish to serve along side other lean chicken, beef or pork to add in separately. Or not. So delicious! Thank you from a new viewer of your channel from Canada!
