its very hard to undercook prawns. Suggest you stop the fire as soon as you see the prawns curl, since it still has sauce it will finish cooking on its own. But yes the way you do it is really no fuss quick and amazing flavor. This with kangkong belachan with steaming hot rice! Done deal!

Usually this dish will be served with the whole prawns including shells. But this is ur home cooking, of course u can choose to do the way u prefer.

Err…maybe add abit more dark soya sauce for the caramelised colour?

funny that was what i was thinking too, the way the prawns were curled up. Then i remembered that was how my grandma did it.
Think prawns were overcooked. Not authentic Nyonya assam prawns.
