To add to my previous comment..honey is heavy, so it’s probably weighing it down causing it to deflate. I’d try 1 tablespoon of Swerve confectioners, plus one extra egg white and 1/2 to 1 teaspoon cream of tartar. And beat the ingredients on high for a minute longer. ❤
I make keto lemon curd and always need to think of ways to use up the egg whites. Lemon curd is mostly egg yolks. The combo of this bread and lemon curd would be amazing for an occasional breakfast treat!❤
I saw a recipe the other day with egg white powder and water with cottage cheese that makes a bread. The white egg powder is so expensive. I'm glad I came across this recipe. I can't wait to try it. Thanks

I’ve tried this many times and agree it’s more marshmallow. This doesn’t taste like proper bread to me. I’d just use almond flour scone recipe as a loaf. It’s perfect.

It's delating because you bought it out of the oven too quickly. Treat it like a pavlova. 1. Never, ever open the oven when it's cooking. 2. When it's finished cooking, turn the oven off. Leave it for a bit and then pop a towel at the door of the oven, so it's just ajar, and don't take it out until the oven has cooled completely.

Have you tried any of Kirbiecravings recipe's using geletin powder? I can't help but think of back in the day when I made my kids jello squares (finger jello or whatever it was called LOL). Can't think of any other time I used unflavored gelatin LOL
That is normal it always deflates influencers take photos and show you what it looks like right out of the oven. If you use egg white powder and other ingredients it can stay loaf like but to be honest the egg white powder tastes like cardboard foam and makes you choke.
This is basically angel food cake. Cream of tarter will help it keep shape and not deflate.

Bake it in a loaf pan. When done, rest the loaf pan upside down with sides on something higher till cool. That might stop the bread from deflating.
