I was also firstly expecting Luca to be dismissive/awful to Marcus when he was asking so many questions and seemed inexperienced, but it ended up being the complete opposite, such a good show - cool take and good video man!
Totally agree. I think throughout the whole episode they subverted our expectations…between this bike crash scene as explained in this great video, and as you say through Lucas behaviour towards Marcus.
I thought it was possibly a symbolism of his mom thanking him for all his care regardless of her short life experience and she finally was passing and going on her way after such a meaningful hug with a complete stranger
I also interpreted it as related to his mother. I think he feels the need to "help" beyond what he can give and he tends to exagerate the role he plays in his mothers situation. So in this scene he thought that the man was in great danger and it turned out once he got out of the fence, that old man wad fine and totally capable of taking care of himself, for him that was an infortunate accident but life continues. I think that's what Marcus was supposed to learn from this event and then carry that into his baking
I love that we as the viewers are watching this waiting for the something bad to happen, Marcus gets sent to a beautiful country to learn from a professional pastry chef, but what if his mom dies, but what if the chef is an asshole. He runs into this man on the bike and we think surely someone’s going to misinterpret the situation and something bad will happen, instead Marcus shares a tender moment that crossed language boundaries. We’re waiting for the other shoe to drop much like Carmy’s speech in an earlier episode instead there is no shoe, which ties into what Claire says to carmy later on. Although in the end the of the season, the other shoe does drop, Marcus’ mom dies, Claire and carmy break up and he locks himself in a freezer, and Sydney is throwing up with anxiety over the restaurant

I'll be honest too, I was waiting for something bad to happen, that they would see Marcus helping this guy and misinterpret it as him mugging the guy. This whole episode shocked me actually because I just kept waiting for something bad and dramatic and instead, the show surprised me in an amazing way and just did not do that.
I didn't catch, consciously, on the sound design for the scene, but that ominous overtone was heavy. Their shared moment held so much weight as well, I can definitely see Marcus using this. I wonder if, other than the focus on the phone dropping off his station, the sound design for the other episode connected at all. Without a rewatch, i don't think so, but they should keep going with this for the next season.
3:35 well.... Copenhagen is full with blacks. And also Denmark is one of the European countries, where a very lot of people - and when they speak, they speak a very good English. But anyhow, I understand what he meant by that.

Pastry chefs are often a little softer than a CDC or CDP, but just as crazy.
I love that he’s a good guy, also shows carmy wouldn’t send Marcus to an asshole like his former boss
This was a MASSIVE scene. It was like this whole episode was about Marcus FREEING himself to also live his life and experience the world and grow.
