ArcScan is meant to digitize drawings (typically scanned cadastral maps or the likes). In your case, you want to classify an RGB image. With a true colour image, you can use the image classification toolbar. resources.arcgis.com/en/help/main/10.2/index.html#//00nv00000008000000 You'll need to draw some sample polygons and use them for training a classifier. You need spatial analyst licence for that, and I would rather use an image analysis software instead of ArcGIS for this kind of work.
Hi, when I made it, I was still a beginner and wanted to just show what I was working on. In this particular data, I understand there was no coordinate system but the purpose was to clean up only. If I had made it now, I'd definitely set the coordinate system first.

In the image conversion, My Jpg format have no bands, and also convert imagine image is shown dead. What will be the reason?
Double click on the jpg. It should contain at least one band.
