Perhaps it would be useful to make a video estimating budget to do common jobs, like adding toilet ok for western people. Then you can compare to house prices with work already done. Sometimes more finished houses may be a better deal, or fixer-upper houses may not be worth the time and work needed.

Yes please for videos about buying property in the Carpathians!
Having just taken a (very) short trip through there, the development going on seems extremely lively (especially compared to my first trip there in 2007).
Is the quality of roads, electricity etc keeping up with the development at all?
When looking at that region, roads outside of the main ones (and Chernivtsi to Yaremche must be one of the most beautiful roads in Europe) would be my biggest worry. It does seem like a region for 4x4 drives... (when looking at accommodation on-line loads of very attractive options were taken off our list just because reviews mentioned roads full of holes)
I'm a bit puzzled when you talk about safety in more remote villages. Wouldn't just the remoteness be a factor of safety in itself? Especially when you get to know everyone, which you would have to do if moving to such a place.
Or do you mean things like response times of emergency services if something really bad (heart attack, falling off a roof, car accident) were to happen?
Taking a look at Galicia-Volhynia would be a bit out of your area perhaps, but might be interesting for your viewers. Physically close to rest of Europe (the Poles are building roads like crazy, a friend of ours drives (Helsinki)Tallinn - Lviv with ease in less than two days now), lots of nature and quiet places still. And the prettiest city (sorry, haven't visited Odessa yet ;-) ), Lviv.
