    Crisp cool morning. Coffee is brewing, birds are singing in the trees and breakfast is on the stove. Sausage sizzling, mix in some eggs and butter them biscuits. It’s gonna be a good day! Country living! Thank you for bringing us into your kitchen sir. God bless and have a great day!

    I've mixed Leggs seasoning like that all my life and I'm 70 years old but I found out if you add about a 1/4 cup of water to that 15 pounds of meat it will mix so much better.

    Great video!!! Your my kind of guy. You eat 6 or 7 eggs.
    When I was youngster my great grandparents would always bring us eggs. I was staying with my grandparents that summer I believe I was about 9 years old. I remember looking out the window as my great grandparents were walking up to the house. I told my granddad " oh man they're bringing us more eggs" . My granddad told me that they're giving that to us out of the goodness of their heart and you're going to eat them damn eggs everyday. Now I wasn't a big egg eater at that time. But my granddad woke me up at 5:00 a.m. fried me up several eggs floating in bacon grease sat me down says now you eat boy. From that day forward until now I eat about half dozen eggs. I'm 53 now. My grandparents passed by now and I have both of their frying pans and I make my eggs floating and breaking Grease.

    I keep a small pan on the stove and do test runs when I am mixing it and adjust the seasoning like that too. That sausage is looking good. I like these cooking videos you are putting out.

    Thanks Again Jeff, for posting this, Takes me back to my childhood says. Times were good then!
    Making Sausage, Dad and I would grind up the Venison and Pork in the kitchen while Mama would sew cases for the completed product. Mix all the meat together with the seasoning, then grind twice and hand mix some more seasoning and stuff into clothing sleeves, making a 2-foot x 5-inch roll. From then on we always had Sausage for Breakfast, with Coffee and Pancakes.

    01/15/2023 Our Romanian neighbor here in Oregon has a pig "offed" and processed at a farm 45 minutes west of town.
    FRESH porky pig sausage NOT pumped full of FDA chemicals is the finest sausage one will ever taste.

    My Granny never measured anything while cooking. She said to never make the same dish exactly the same because that's boring! She was an inspiration to me when she taught me a thing or two about cooking. That's my only artistic quality. Yeah, I crash-n-burn here and there, but most times it all comes together.

    Jeff that kitchen looks clean as can be &there is nothing wrong orunsanitary about using the sink to mix in I just wish I was there to enjoy the end product say hi to your great& beautiful daughter Hannahi am sure she will stroll in soon bye Frank from Texas

    Hi! Just came across your channel and right off the bat I noticed you use Leggs sausage seasoning. That's my favorite for making sausage! And I have made a ton of wild hog sausage! But I wanted to give you a few tips sir. I have used plastic storage tubs to hand mix my sausage in and they clean up good too. But, as I'm a little bit older than you, I found a stainless steel meat mixer that I bought from Sportsmans Guide. Now my hands and fingers don't hurt so much anymore! I did not get the biggest mixer, I got what I could afford which was the one that mixes up to 17lbs at one time. Its fairly easy to clean up too. If you make a lot of sausage, I recommend investing in a meat mixer! I also use it to mix my meat with the seasonings when I make summer sausage. And I only do 4lbs at a time for it but it works great for that too! I love having the meat mixer and since have bought used plastic meat tubs from packing plants that were going out of business or grocery store meat departments that are upgrading their equipment. The tubs come in handy for all kinds of meat processing or vegetable processing for canning. And when we have a really good catfishing haul they are great for that too! Love what ya do tho and thankful for our country life!! God is good!!

    I know you got the sink but they have meat boxes at cabelas that hold alot of meat and fit in a fridge. Saves on garbage bags too. You prob have seen them

      Yes. I never er use prepackaged spices. I always buy new spices for sausage.

    Jeff i bought several of the plastic meat lugs in a couple of sizes and keep them around for everything. I use them when processing my Hogs and deer, catfish cleaning after jug line fishing, vegetables from the garden or anything else i get in bulk. They are easy to clean and do not hold smells. I use the Leggs also it is good straight out of the pack, but I am Cajun and cannot leave anything alone lol I always adjust it to my taste. Check out the bearded butchers also for some great deer processing videos.

    Don't worry about mixing sausage in the sink. There's actually very few times to be co concerned about cleanliness with food your going to cook. We've been condition to think we have to be sterile with our food and it just not true.

    I use my sink for EVERYTHING! I season meat in it. Grind sausage into it. You name it. If your sink isn't the cleanest container in your kitchen, there is something wrong with your kitchen

    You were mixing your sausage and spices in the sink. I’ll brine turkey in small ice chest inside a trash bag. Or marinate ribs or brisk in trash bag, you don’t have to use so much brine or marinate. I didn’t see the grinding, but me, when I cube my meat. I season it then, never tried doing it after grinding.

    Question sir, I tried a wild hog once and I could not get passed the rank taste. I realized that it was a big hog and told don't eat the bigger ones. We are in Texas and have a lot of hogs I mean a lot
