Thank you for doing the lives. I have learned so much from you! Question … you replaced some of the cream in the ganache with some simple syrup. Have you ever used a Torani syrup in a ganache?

Just a quick question, couldn't you just put Judy's freeze dried passion fruit powder directly into the buttercream?
Hi Randee! Thanks for sharing the love! So this particular powder was a juice powder and not freeze dried fruit. I’m still playing with the product but it needs to hydrated to really bring out the flavor. The freeze dried strawberry powder was great straight into the buttercream though!
I was weighing my EWs before aging and just discovered that I should weigh them after aging, found out they weighed 2-3g less!
What are the ratios used today?

Hi Nicole can you tell me how many teaspoons are in the 2 grams of the egg white powder? My food scale doesn’t seem to move when I try measuring the 2 grams..🤷🏻♀️
