I was thinking could we put all the sugar like in this method but in ur French method.. so egg whites and all sugar whipped to stiff peaks and just add the almond flour.. can't believe there's so many ways of making macarons. Can't wait for ur next video

I watched the original and they never showed the inside. I’m wondering if it’s possible to not get hollows? I already have trouble with hollows.
Rats! I meant to watch this live, but didn’t make the connection that it was Labor Day and I wasn’t home. But it was so interesting! I want to try it. Do you think making the meringue stiffer would help with the hollows? It does seem very scary to have the meringue so runny! But they look so pretty.
How is oven drying done when you have more than one tray? Is the oven temp adjusted up and down? Do you dry all the trays, up the temp, and then bake? Any tips are helpful!!
Do you use the fan in the oven while baking macarons?

I made them and they look great, beautiful feet but they taste more like a meringue cookie to me than a macaron.
I’m so glad you tried it!! I finally made my fillings and will see how mine mature. Did you fill them?
Yes I filled them with the Mocha recipe but put too much espresso(used powder in coffee, too strong) so added more chocolate. I liked it so will make it again with weaker espresso😂. They do not taste less sweet to me though.
