  • Oxtail soup may not strike you as a dish that sounds particularly Thai, but yes in fact we do have our own version of it! It's not a super common dish (beef isn't a popular choice of meat in Thailand to begin with) but you can most often find it at Thai Muslim restaurants. There are two main versions of oxtail soup, one is the Thai Muslim version, which you can find in restaurants I mentioned. Another type is the "Thai version" for lack of a better term, which tends to be simpler and use simple staple herbs most people have at home. This is the version I'm sharing with you.

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.

    Made this yesterday. Good, thank you ! Before cooking, i usually soak the tail in cold water a few hours to get rid of the blood and impurities.

    I love your Channel! I am African-American and have been eating oxtails my entire life. They are divine. Of course I have never cooked them like this, but I can't wait to try this recipe it looks delicious!!

    "Gaminess" of any meat etc can be removed extensively by either soaking it in a bath of Lime/water or Vinegar/water 1:4 ratio. It can also be tenderized by using grated Raw Papaya with skin. 1 TBSP for every pound of meat. Max 2 hours.

      Mario D'Souza thanks for sharing. I cant eat lamb because of its ‘strong’ smell. Any cooking tips for that? Some people say its if your animal isn’t castrated idk

      @@sarasanic Thank you very much for appreciating, my suggestion to get rid of the "GAMEY" smell etc. I recommend you try it out. My experience has been positive. Also, may I suggest another tip for Diced Chicken on the bone. Soak the chicken pieces for 4 hours in a Solution of Salt, Sugar, and water in this proportion. 1 litre Water, 4 TBSP Salt, 2 Tbsp Sugar. Rinse with fresh water. Dry it out with a Kitchen Towel or Kitchen Paper. You may proceed to whatever recipe or cooking method you wish. If you are using a whole Chicken. You can soak it for 8-10 hours and proceed to either dice it or bake or grill whole etc. I have recently come across this Tip and am very very impressed. All the best.

      Hi ! My trick to deal with gameyness is to hard boil the meat for 10 minutes and then change the water. I'd also make sure to wash the pot or use a new one. Hope this helps when you've no time to soak.

    Hi Pailin. I grew up eating oxtail in many forms of which one was a stew made with potatoes, celery, carrots, onion and tomatoes. Sometimes also brussel sprouts and butternut squash. If you are a burger lover, oxtail is a step up. My grandmother used to make a oxtail bean soup and she drank the soup while I ate the oxtail. It's an OMG moment when you dip the oxtail in ketchup. Tell the butcher not to trim the fat 😬.

    In France and Germany, the clear and thickened oxtail soup is served boneless. Also prepared differently.

    You would want to add the lemongrass and kaffir lime only only after you have skimmed the scum off of the soup for obvious practical reasons. They will float at the top and you would skim them off every time which is not what you want.
    Also I would like to get to know the Butcher who sold you all those meaty parts only to get stuck with the bony bits which no one will then buy. Usually what you are sold is either one whole oxtail, or a reasonable ratio of meaty and bony parts.

    Maybe good if you add some veggies and make a meal out of it. I would not call it a soup. Just meat cooked in its broth! If I’m going to eat something with a spoon I want something on the spoon to eat not just sipping the broth.

    Those oxtails look absolutely delicious I’m a black woman who loves fish sauce and because of TH-cam chefs like you I’m getting pretty good at cooking I made oxtails a few times and I will make your Thai oxtail soup it looks very flavorful.😋👏🏽

    In Malaysia, they're plenty of 'Kedai Tomyam' (same like restaurant but not the high end type) which is most of the chef are Thai Muslim (probably from Pattani or Songkhla), they usually served with this version of oxtail soup (they called it Sup Ekor)...
    Nowadays, oxtail soup seldomly served at the restaurant or if they serve it, the cost will be about MYR8 in small bowl, for 1pax which is quite expensive for kedai tomyam level, and it comes with only 2 small chunks of oxtail...😂
    .
    And, oxtail soup is my favourite and usually served in my family house when Eid al Adha festive...

      You definitely can do that, but traditionally it's not done in Thai cuisine.

    You can go to the American stores that has ox tails Villa markets, and you can go to Foodland markets, in Bangkok Thailand they will have oxtails and lamb for you I go there all the time there is a villa supermarket near me how are you can also go to the Siam paragon gourmet supermarket there they also have Oxtail’s that’s the best place to get them because they are most trimmed oxtails they cost a little bit more than Food land super markets and Villa super markets but it’s worth it because it more trim and less fat

    I think I might make this with regular beef. Using oxtail looks like I would have to fight with bone to eat my soup. I hate fighting with bone to eat soup.

    In Thailand the beef is usually water buffalo or Brahman cows suited for the tropics thus the difference in flavors. Do a goat recipe. Please.

      Hi! You'll have to look up cooking time from a pressure cooker recipe for that sort thing. (So in this case oxtail soup recipe.) We don't know the pressure cooking times ourselves as we don't do it :) Cheers! Adam

    My mom taught me as a kid to use light (Chinese) soy sauce, specifically Pearl River brand. When I went to college and started shopping for myself, that wasn't as readily available. I started using Kikkoman and used it for about 2 decades. I decided to try light soy again. SO MUCH BETTER. I understand light soy to be the best "press."

    I followed your directions for oxtail broth, and I have been able to create 3 different dishes with it. It's so beautiful and easy to transition into other recipes.

    The beef in America aged or they let the beef rest before they sell it. In other countries they don’t do that and that’s why you get the gamey smell

    I watched Migrationology eating this in South Thailand so I searched in TH-cam for the recipe and I am glad I found your channel. This seems like the same as Philippines’ “Sinigang”. Is this supposed to taste sour before you put the lime in?

    Wow! It brings back a lot of memories to me. I used to live in Thailand for 5 years. And this dish is one of the Thai dish I miss a lot. I always eat the muslim version eventhough, because I am muslim. But I don't see much different from this version 🤔

    I taught oxtail is for stew only..coz it usually cook for stew.Than washed first oxtail with APF to get rid of smell before cooking.

      Well, actually it’s you olfactory part of your brain which is next to the memory part. Memory can stimulate the olfactory part and remind you of the smell.

    Hi Pailin. It’s definitely soup season and this looks fairly easy to make. I’m curious why didn’t you parboil the ox tail first and remove all the impurities.

    Wow those chunks of meat look huge. The oxtail I get here is more bone than meat. Made a Korean oxtail soup recently gonna try this soon😋
