It’s so iconic and historical and funny, and that’s why it’s worth going. The burger is pretty simple, but I do love how you serve your own toppings, and the pickles are delicious. They take such care and art in preparing their burgers, and what I noticed is that every Chef specializes in one of the ingredients, and prepares is so carefully. It was assembled to perfection, and the harmony and balance of ingredients is what made it so good. I think the reason it was so good to me is that it was a real burger, nothing too fancy or not trying to add unique ingredients - it was just a burger that we all love, but taken to the next level. Wow, Mark, going from "the Goat" to Au Cheval is quite the space trip in the hamburger universe! I go with some friends to the Billy Goat down there under Michigan Avenue at least once a year. They do assail you instantly upon entry with the cry for a double cheeseburger--it's fun. I like the way you built up the burger with pickles, relish, onions, and mustard--all you'd need would be tomatoes to make it almost like the way we dress our hot dogs. The history is a big part of the place--the pictures all over the walls are worth perusing.
The Au Cheval burger is really good, and the assembly line aspect--the spectacle--is what I consider we're paying for along with the food and the location out in what's become quite a restaurant row on W. Randolph Street.
It's cool that you also featured such an unpretentious spot as Redhot Ranch. It's a place I like to stop at when I'm in that area for real estate appraisal assignments.
Another popular neighborhood spot is Top Notch on 95th Street way down in the Beverly neighborhood--maybe Derek's been there or heard of it. They grind their own meat on site, and the fries are cooked in "robustly flavored beef fat," as the menu tells you. There are some YT vids about Top Notch.

Red hot ranch was my spot when I lived in Chicago, can't beat it for the price, it was the smash burger before smash burgers became a thing! I always got mine with just onions and RHR sauce, no tomato's or lettuce.

Theres another burger many people know but don't know is from Chicago. McDonald's home is Chicago. It started here. So the global Hq is here, the global restaurant that serves an international menu, Burgers that are only sold in Thailand, Japan, Ireland etc can all be bought at that restaurant

Au Cheval is worth a day trip from Boston. Unexplainably perfect. The salt level, the beef flavor of the burger that has never been frozen and perfectly cooked. Finish off with a coating of cheese and egg yolk in your mouth.
It’s the best ingredients perfectly executed.

You've done Chicago justice with these videos, Mark! You've gone to some absolutely awesome places, and this is still just barely scratching the surface.
I do wish with you had gone to the other Redhot Ranch location on Armitage, to get the full Chicago experience under the L tracks. However, filming would have been difficult, and there's no indoor seating.
A coincidence with the BG Tavern is that McDonalds did not have a lot on it either when It first came into Chicago, just pickles. Most burgers had yellow peppers, pickles, and onion.
I think it's awesome how humble mark is and that he brings his family with for his food adventures. I'd like to see Ying and Micah doing some commentary on the food from time to time too. Imagine Micah describing his experience eating a really good chickie nuggie lol.

The best burgers spot in Chicago used to be a place called Lockdown, best burgers, in my opinion (they closed down). Now my favorite is Paradise Pup in Des Plains.

I have lived in Chicago for forty - six year's. I have eaten at every restaurant in his Chicago video series. Some multiple times. Every time I leave Chicago and I immediately am disappointed with other food selections most of the time. You truly need to take a vacation to Chicago! I am truly spoiled with the selections of Chicago food.
