I have been hanging around the Grocery store on Silas Deane (Sai Foods::::Rocky Hill, CT) learning about all the excellent Indian products while learning to mix the spices and herbs. (I started to learn French cooking in the Central African Republic long ago with Olivier, a French Coopérant and a gourmet chef.)
I love many types of African dishes with peanut sauces and Asian food: especially Indian and Thai. I now am cooking many fusion dishes..e.g. Cajun/Thai Congolese/Indian. I like what I cook with the freshest and most carefully prepared ingredients and techniques but people including my family fear unusual foods. I want to start cooking Ethiopian also.
French, Spanish, Italian ....cooking use herbs and fewer spices than Asian and African food in general so I must learn to balance sweet and sour herbs and spices. Cooking is great therapy and I love to raise my own food and herbs.
