    CHICKEN TIKKA MASALA RECIPE
    Yield: 4 servings
    Prep Time: 15 minutes
    Cook Time: 35 minutes
    INGREDIENTS:
    Spice blend ingredients:
    3 tablespoons coriander
    3 tablespoons cumin
    1 teaspoon cardamom
    1 teaspoon cinnamon
    1 teaspoon turmeric
    2 teaspoons black pepper
    1/2 teaspoon ground cloves
    1/4 teaspoon red pepper flakes
    Chicken tikka masala ingredients:
    3 cloves garlic, grated
    3 teaspoons grated ginger
    1 1/2 tablespoons spice blend
    1 1/2 pounds boneless chicken thighs, cut into 1-inch pieces
    1 cup whole milk yogurt
    1 tablespoon vegetable oil
    3 butter pats
    1 onion, minced
    3 tablespoons tomato paste
    1 red pepper flake packet
    1 (28-ounce can) whole tomatoes, crushed
    1 1/2 cups heavy cream
    1/4 cup cilantro
    Kosher salt
    4 cups cooked rice, for serving
    Steps:
    1. In a small bowl combine the garlic, ginger and spice blend. Add the chicken to a medium bowl and add half the spice blend as well as the yogurt. Stir to coat. Place in the refrigerator and allow to marinate for 4 hours or overnight.
    2. Heat a medium sized pot over medium-high heat and add the oil and butter.
    3. Add the chicken and allow it to brown on all sides. Remove the chicken from the pan and stir in the onion along with the remaining spice/ginger/garlic mixture. Cook for 5 minutes, using a wooden spoon to scrape the bits from the bottom of the pan. Stir in the red pepper flakes, tomato paste and canned tomatoes. Stir in cilantro, followed by cream. Allow to simmer for 15 minutes. Add the chicken back in and cook for an additional 20 minutes. Serve over rice.

    Credit to Frankie here, mixing the ground spices depending on the dish is a pretty good compromise between what most indian families do (use the premade spice blends) vs. how most non-indian youtubers grind whole spices and make indian food look more complicated than it actually is.

    I love this. Especially the diy spice blend. To go dairy-free, use coconut oil instead of butter, coconut cream instead of yogurt (or omit completely), and use full fat coconut milk instead of cream. To go meat-free, use a large can of drained and rinsed chickpeas instead of chicken.

    Cardamom is a beautiful spice. I love making my own spice blends. It just doesn’t compare to store bought junk. The initial layout for all the spices might be a little costly, but you end up saving a ton by blending your own. Yesterday I made a yummy chicken rub for the bbq and it was so deeelish. 💚

    Does the chicken really have to marinate for 4 hours?? Started making this before getting to that point; I thought it was like 30min lol. Maybe put a disclaimer next time?? Now instead of having Tikka-Masala I have to wait until Tikka-Mañana =(

      You can try putting the spice straight into medium-hot oil and cooking until fragrant and then putting in the onions and chicken. Get the latter coated and cooked then put in the yoghurt/cream/etc.

Plus, watch their videos: They don't give measurements or actual times in the instructions. I'm pretty sure they only added the instructions in the comments because so many people were asking.

    Tikka Masala sauce and spice blends are so cheap to buy now, but I 100% about the freshness factor. I love Indian food, but my body HATES turmeric. I'll have to risk the hit to this flavour profile by leaving it out. Don't @ me! You don't know what turmeric does to me, and trust you don't want to know.
