    My 89 year old mother was raised Mennonite in Manitoba, Canada. I remember her canning when I was very young; however, she never taught me. I taught myself 40 years ago when I was in my 20s. Yesterday I invited her and my youngest sister, who has never canned to come over and do some canning. Before we made my Grandma Plett’s Sweet Pickle recipe as well as your Pineapple Zucchini recipe, we sat down and watched this video together. My sister’s name is RuthAnn. My mother is the oldest, but the oldest brother’s name is Alvin. This video meant a lot to us as it brought back wonderful memories. Thank you for sharing your life with us!

      Thank you for telling me your story. It was so nice to hear this! Bless you! It's wonderful that you have your mother at 89 years old. There's some longevity in my family but my parents died near 80 years old and younger than my grandparents. Food is so important in our lifespan. RuthAnn is very good with choices of ingredients.
      It was quite heartwarming that your mom did get to watch and maybe help in your canning along with RuthAnn... God works in mysterious ways. It was also a good idea for watching this video together to unify the three of you. I wish I had my mom here to use this concept with her. Thank you ❣️

    I believe the philosophy that playing only is the work of children has contributed so much to the mental health issues, including narcissistic tendencies we are seeing today. A person feels more valued when they actually are a needed part of their family and community. Children are no different.

      They also acquire a sense of resourcefulness, ask me how I know. My mother owned a flower shop and we new the meaning of the word "work" and had to work in the shop and in the house cleaning.

    I'm so glad to hear you say you reuse your lids/flats!! I have been canning over 40 years and just this year learned that yes, you can in fact re-use lids/flats that are in good condition [not bent/dented. . . ]; I am thoroughly disgusted at how much money I have wasted buying all new lids every year!! I've also learned you can can in glass jelly jars, glass peanut butter jars . . . that have lids with 'gaskets' built in!!! Have had great success doing so. SO enjoy your videos!!

      I also love your channel. It is a long time since I baked as you do. I love ❤️ the ‘Bread_Sticks’ you’ve shown all of us how to do. I used to make bread twice a week. Just the husband & myself (with a newborn). I live in Queensland, Australia. The property we were on was about 120 miles from nearest town. We lived quite a few miles west of a ‘Railway Siding’ it’s a bit of a town today, Nebo. Not to be confused with a Mt Nebo - that is on the outskirts of Brisbane- our State Capital. No Nebo was and I think still is about 14 hrs drive north of BNE. There was a small shop in Nebo but the shop owner was greedy for every thing she could be, example : the Mail would come through Nebo in late arvo. Too late for people to dash in and collect goods. I’m not real sure but I think Mail would arrive after shop shut. The shop would charge 10c per loaf to store it till morning. I had a GOOD cook book. I got a drum of Bakers flour + yeast. We had some ‘ROUGH’ bread - no matter how GREEN IT STILL fills the tummy. A few weeks later we were eating fairly ‘choice’ bread. That newborn is 50 next year. This was a cattle/grain property. We had a house supplied (we found an old vegie patch - it had a windmill + pipes to water so we grew most veggies and enjoyed a simple life. Never thought of preserving veggies- we ate them all. Anyway, I’ll continue your lovely TH-cam.

    I make it with shredded zucchini. It works perfectly in any recipe calling for crushed pineapple.

    I MADE THIS!!! Thank you for sharing your process for canning pineapple zucchini and the cake recipe. I had no idea this is my aunt's favorite kind of cake. And I have so much zucchini this year! My husband loved pineapple on cottage cheese. I did 15 pints yesterday and baked the cake today. It was AMAZING!

    Thanks for sharing your recipe for turning zucchini into pineapple pieces. I like to substitute 50% or more grated zucchini in carrot cakes. Extra green veggies and no one notices the difference.

    When I was 5 years old it was my job to feed our chickens. It didn't hurt me one bit!

    Good morning RuthAnn and sweet family! I have heard of taking zucchini and making pineapple zucchini and now I have the recipe. Your pineapple upside down cake looked delicious. I’ve always made mine in a cast iron skillet, but that’s how my grandmother and mother did it....we learn from what’s passed down and I guess that’s what we get used too.

      Hey there. I live off-grid with no oven, so, like you, I tend to use pans on top of the oven, which seems to work well for some things. I was going to try a bain marie method that I use, for this recipe. Have you tried it? I think it'll work well for this type of cake which tends to be very moist, so the extra steam moisture shouldn't ruin it.

    I so enjoy your weekly video but it ends to soon 😊Living in TX we run our a/c all summer and I often wonder how my maternal grandparents raised 12 kids with no electricity, running water and only a wood cook stove to cook on all year round! They raised cotton and sorghum so we’re in the heat all the time. How times have changed.

    I laughed right out loud when I saw you measuring the lemon juice. That is so like me in the kitchen. I wish we were neighbours as I know we could be great friends. I love the twinkle in your eyes. I will try this recipe this year but I will not tell anyone that it is zucchini as then they would not try it. :)

      My old bottle of lemon juice doesn't have the plastic insert that's causing the splashing. You could take it out and splash less by just pouring.

    Hi Ruth Ann. Potato bugs are very bad in our area of Canada. I was listening to a gardening program and it was suggested to plant marigolds in between each potato plant or plant an onion in each hill of potatoes.

      Did you use 1 TB of Lrmon Juice like she says in the Video or did you add 2 TB per the written? I didn't see the written until they were already in the canner!

    LOL! I'm with you on messy, Ruthann! I'm the only person I know that can get half a cake of batter on the cabinets, even when I'm trying to be extra careful. Canning, juicing and wine making just about require galoshes. I'm actually debating putting in a floor drain and fittings for a pressure washer in my kitchen of my new house. :) Thank you for the reminder of the mock-pineapple. My mom used to make it often. She also made mock cherries and mock berries with the same recipe but white grape juice and a 1/8th tsp of berry or cherry Kool aide per jar, and sweet lemon bits for fruit salads by essentially canning it with strong lemonade. I'm thinking about trying it with storebought juices like cranberry, instead.

      @@simplydivine5053 No real recipe. She did just as the pineapple but used white grape juice instead of pineapple, the same lemon juice and sugar and used 1/8-1/4 tsp of berry soft-drink powder. I'm sure it's safe to use Ruthann's times, bc grape juice is actually more acidic than pineapple.

    This is a great idea. Pineapples in Australia can be a little expensive when your canning in bulk for the pantry but zucchinis are super cheap... I will have to try this on pizza 😀

      @andreamortimer2610 we tried is with the zucchini and the flavour didn't quite hold up to pizza. What did, though, was choko. We use it alot in pies and soups as a filler because it absorbs all the flavours and I found it makes the best pineapple substitute!

      @andreamortimer2610 I like to grate mine and freeze it. I defrost it and add it to baked goods like muffins. Those zucchini butter is apparently good too. @OurSmallFootprint has a recipe for that one.

      One of my friends just told me she makes big batches of zucchini lasagne and freezes them. She also sent me a link for a zucchini cottage cheese flatbread that I'll give a try. Time to experiment 😁

    What a great recipe. Thanks for sharing. Pineapple upside down cake is my favorite. I also have to add that I did your open kettle canning method for my wild blackberry jam, and it worked like a charm. I'm surrounded by a field of wild berries, so I'm getting ready to can my second batch.

    Thank you. That was really good and different. I will make sure my granddaughter does some structured work, cooking, chores before we play outside. I have always done this with her already but so nice to hear from you the merits of doing this. She turned 3 and I have her starting a 2x2 foot garden, putting peanut butter and jelly on bread and cutting a banana with 2 hands with a butter knife. Her Mom didn't say anything but I hope to set an example for her as well. Thank you.

    This is the first of your videos that I have watched. Thank you for the information on the water bath canning! I've been counting for 12 years and never knew anything more than using water to cover my jars. Very interesting! And if I was younger I would have a homestead like yours.     Just found your channel! Great ideas for using zucchini. We do the faux pineapple, zucchini pie filling, and several others, but my favorite is zucchini salsa! Love it!

    Love you’re recipes. I always sauté sliced zucchini with olive oil fresh summer tomatoes onions and oregano parsley garlic as a side dish or over pasta .

    Thank you, we love zucchini and I'm always looking for new ways to use it. I plant a lot of zucchini because it has gotten so expensive in my area, it cost over a dollar for one skinny little zucchini.

    Love this video!! My son loves anything related to pineapple and this will be amazing to try at any time! Adore your videos & your voice is so soothing. I just turned 48 last summer on the 2nd & I have desired to live a rural life since I was 4 and doing my all to find a way to by next Spring Divine willing.     I've been enjoying your videos so much. And learning! Knowing that I don't have to cover my jars with water to waterbath them has made canning so much easier. I had been watching European ladies on TH-cam doing the same type of low water canning and, truthfully, was too scared to follow their lead, fearing dire consequences if I didn't cover my jars completely. After watching your videos, I felt more confident and followed your (and their) method. So I no longer have liquid siphoning out of my jars or lids not sealing because of the siphoning. Thank you for sharing your knowledge.

    Love this idea. Hard to fathom an area where you don’t need an a/c. We had 136 days above 90 last year and are well on our way to be the same this year here in Texas. My garden is just about burned up.

      Same here! I'm in AZ, and temps here are really hot too. However, the evening temps have been dropping lower than usual, which is really nice, but I still need my AC during the day. The 30 degree drop at night has been a nice change though! 🔥💃🏼☀️

      @@dreamscape405 our low is around 78-80 degrees. Mixed with the humidity, it feels like 90 at 7 am.

    You're doing an amazing job with your kiddos. They don't appear to have to be asked to do anything. Wonderful!! My 2 boys were fun and learned a lot once we moved to the country.
    Now, I love zucchini, but I 🥒 🥒 never would have thought about making pineapple 🍍 🍍 from it. Yum!!!

    My family enjoyed Zucchini Cookies; Chocolate Zucchini Cake. I shed it with the skin on while small and freeze in 2 cup measures in small bags for winter delight treats. I am delighted to hear about this new way to use it! Many thanks❣️😊

    I love this and can't wait to try it . When I first started watching your channel I wondered why you weren't covering your jars lol. I puts some hooks inside one of my cabinet doors for my measuring spoons and cups it took a little bit to get everyone in line with putting them there when they put the dishes away, but now I can usually always count on them being there. :)
