Gina makes these pickled vegetables look so easy. I add chilli peppers to mine. She was a fabulous woman and encouraged so many of us to try her recipes.
My MOST favorite channel! I absolutely LOVE her! I grew up in Welland, Ontario, Canada on the canal...on our old street, we had lovely neighbors just like her, Italian, Hungarian, Croation and we shared our food...we kids were so spoiled. These elder ladies fed us kids all the time...after school, while we played in the street, the smells of Europe mingled in our noses while we kicked the ball in the street avoiding the horse manure left that morning by the milk wagon...hahaha Today, 60 years later, I now live in beautiful rural country of Wisconsin, USA. That's a beautiful antipasto salad! If I were to make it, I would add a couple different cheeses and probably a meat or two. It would stretch it out and make go further. It also makes an excellent gift for someone and/or center piece dish for a family meal. I truly enjoy Nonna's video's. She has a beautiful heart, her love shines through in all she does. God bless!!

My Gran taught me to make this, but we always put a young grape leaf in the bottom of each jar and we did a lactoferment with peppers from the previous summer. Grans immigrated from Molise and Calabria to the maritime Pac NW. We made this as the winter/early spring garden started to bolt from us finally getting sun, but the peppers were never ready in time. So at the end of the season, Gran would ferment the last of the peppers just before the frost. These would start the garden pickles the next spring. We would use the vinegar method if we had more than we could ferment. Gran called this method a quick pickle. We eat this salad all winter served over torn stale sourdough bread to soak up the juices.
I love pickled onions. I love all pickles really. I love this channel. I wish I had grandparents but it didn't happen for me. You're lucky you have such a great Grandma.
You did have grandparents but they apparently didn't survive long enough for you to get to know them. Strongly suggest you do some research on their lives. It may well enrich yours.
