You missed a cool fact. When Dash "got caught" by the teacher in the principal's office, that teacher was voiced by Linguini from Ratatouille.
To be more specific Lou Romano who voiced both characters. He was a Pixar Employee but quited after Up and went to Laika Studios formed by former Pixar Employee Jan Pinkava who was the original director of Ratatouille but was replaced with Brad Bird when he couldn't get the story work.

They're making an incredibles spinoff based around frozone.
I might know how gazerbeam died. He might have been injured by one of syndromes robots of bombs and hid in the cave to heal but died from his wounds
The part of the film when Syndrome's computer flashes the stills of the terminated supers is one of my favorite scenes in the movie. I immediately noticed how much detail they put into the designs, with unique poses, names, powers, and costumes. It made them feel like real people with their own stories, despite how briefly they were shown. The fact that all those vibrant young heroes were murdered really drives home the horror of Syndrome's actions.
The sequel is coming out too late. Fifteen years too late.

I don't think that deleted scene is canon, remember that the computer said that Elastagirl's location was unknown.

One of my all time favorites. I loved it as a kid for being awesome superhero stuff and as an adult, I appreciate how well written and uncensored it is.
I mean sure, there is no gore in this movie, but it's treading heavy subjects like death and depression like real subjects, rather than ignoring them for the sake of being kid friendly.

The fact that this story was set around the 60's I am shook
It's hard to believe with all the high tech used in the film, especially by Syndrome. Remote controlled robots, tablets, the ships and rockets, the large television screens, everything seems like it's from the 21st century. Some of the things like cars do look vintage though.
