There's 3 main reasons. 1. Jumping in some places increases your top speed so it's faster than driving normally. 2. Turning in air doesn't reduce your top speed. 3. Jumping after the rail on ground will maintain the higher top speed from rail for the duration of that extra jump. Looking at the speedometer will give you information about these places.
