Nope! They’re nice and silky. You miss out on some of the super deep dark flavour this way, but it’s a nice delicate flavour instead. If you have a rich beef or chicken stock to amp things up, that’s even better :)
You’re supposed to cook the onions by themselves first and butter for 20 minutes and let them caramelize. Also add a little bit of honey. This does not look good to me. It’s too watery and the onions are cooked enough. That’s why it’s important to cook them first and then cook them with the stock in the seasonings.
Yeah but sometimes breaking rules is ok! It’s delicious, and that’s all that matters! I went to culinary school and worked in kitchens and I know the rules. And I’m not trying to win any Michelin stars with this shortcut method, just saying that it’s a really good option for a quick easy dinner! But if you’re not into it, that’s cool :) thanks for stopping by either way!

So many people do! And it's not like it's necessarily bad... but I feel like it just doesn't do your soup flavour any favours!

I have a ton of purple onions always, so can I use those instead? How will that change the flavor?
The flavour will be pretty much the same but the colour might be a bit murky (dark greyish purplish) but I wouldn’t advise against it!
