For building this, may I suggest using green plates? On the statue there was still scrapes of oxidation, plus it'd give the build a little extra color to make it pop.

Quick suggestion, what if instead of having everything in one “set”, you make several like a set for the statue and another for big sandman, and another for the shield fight scene. I think it would be cool.
One idea I have is to make the shield detatchable from the statue, so you can create the scene where tom and Green goblin, and also to the shield to be able to put it to the statue
When you switched to the Lego Liberty mini figure, it really reminded me of the part of the first Lego marvel game where magneto was controlling liberty.
I designed a MOC of this final battle in Studio. It wasn’t nearly as large as your idea, but it was still pretty impressive. I also agreed with your idea of making it look like a giant minifigure! Also, the fact that you’re taking your time to make sure this is as perfect as possible just shows how much love you have for the film, the build, and your art as a whole (yes, LEGO building is an art and I will argue with anyone who disagrees).

So creativity inspiring, both your process and the video itself. If you want to make it minifig proportions you should look at the cmf statue of liberty minifig for reference.

I did some quick and rough measurements based on the final concept image at the end (9:32) According to this image, the final statue from base to the top of the highest crown spike would be almost exactly 30 minifigures tall. A minifigure is 4 cm tall, so 30 minis tall would equal a total height of 120 cm (47.2 inches/almost 4 ft tall for my fellow Americans) Now, a 4 ft tall "mini" figure sounds absolutely INSANE. The sheer amount of bricks needed to make it, even if hollow, is too much to think about. Can't wait to see where this project goes.
This is an absolutely incredible project Tommy! It looks like it’s gonna be a huge challenge, but you can absolutely do it, and I can’t WAIT to watch the process, and the finished product at the end of it!

I’m excited! yet worried, I like the idea of it just being a Lego figure and I really think that’s the right direction to go but I don’t want it to end up to bland, void of any detail, so either it would be stickers or actual bricks in the detail, another thing I’m worried is the colours, that they might be too dull, as we know copper is shiny and they don’t really do any shiny bricks but gold and silver (that I know of) but enough composing. this looks fricking BRILLANT and cannot wait to see what it becomes! Keep up the amazing work!!
