This Chicken Soup Recipe is Hearty, Comforting and EASY! (Could Use Leftover Turkey)

  • Chicken (Or Leftover Turkey) & Cabbage Soup
    This started out as a ground beef and cabbage soup ( • 🥫Ground Beef And Cabba... )but in the video I subbed in fresh chicken... but this could easily have been made with leftover turkey. So I guess this is now a leftover turkey soup recipe? If you're looking for leftover turkey ideas; maybe this is it. You could easily use leftover rotisserie chicken in this homemade soup recipe as well.
    Ingredients:
    500g (1lb) chicken, cut up
    1 onion, diced
    2 carrots, thinly sliced
    2 celery stalks, sliced
    60 mL (¼ cup) tomato paste
    1 minced clove garlic
    1 - 2 bay leaves
    10-15 ml (2-3 tsp) Herbes de Provence
    Salt and pepper to taste
    750 mL (3 cups) chopped cabbage
    125 mL (½ cup) uncooked rice
    1.5L (6 cups) chicken stock
    Method:
    In large soup pot, brown chicken over medium-high heat.
    Add onion, garlic, carrots and celery; cook, stirring until softened.
    Season with salt and pepper.
    Stir in tomato paste and cook 1-2 minutes.
    Stir in cabbage, rice, bay leaves, stock, and Herbes de Provence .
    Bring to boil; reduce heat, cover and simmer until cabbage is tender, and rice is cooked through about 20 minutes.
    Discard bay leaves.
    Herbes de Provence - When I mix this up at home... it usually isn't the same twice. This mix has only been regimented and sold commercially since the 1970s, so feel free to mix it up as you wish.
    My mix contains equal parts: summer savoury, marjoram, rosemary, and thyme
    With very reduced amounts of: anise and sometimes a touch of lavender.

    My mom made great soups, one of her tricks was to put a jar of baby food carrots in her chicken soup and also a 1/4 cup of ketchup. Sounds weird but after simmering with the other regular soup ingredients it was really good! Have a great holiday season💖

    Glen I have to say I'm loving these 'what's on sale at the grocery store' segments! A comforting soup always warms the ♥ and the belly 😋 Teaching how swapping some ingredients and herbs to a recipe you already know can make a great meal using what you have on hand or what's on sale.     I made nearly the same thing last weekend except that I started with a whole chicken. I have enough leftover stock to make another pot of soup should i want to go that route. Only "major" difference was that I used a 14oz can of diced tomatoes instead of paste. Even used herbes de provence because it just seemed to be the right addition.

      Isn’t the “roast a chicken and get the world’s best broth for free” scheme the best thing ever? I try to keep on eye on celery, leeks and carrots that are nearing their less than great phase in the fridge and throw them into my stock pot. Also, freezing those bones is so easy if you don’t have time to make a stock right away. Cheers to your soup and the holidays!

    In my house tomatoes past tube is eaten by my kid as a midnight snack. And yes squeeze drectly in the mouth.

    Looks very good. Really close to chicken tortilla soup too, if you use cumin and garlic instead, and some corn, peppers and /or beans. Yum. Happy Christmas Glen and Julie.

    Some friends of mine from Eastern Europe made some similar soup for me. They added in tomato paste and it’s amazing and I’ve been doing it ever since. Another option that works well is if you have a jar of leftover pre-made pasta sauce, you can throw that in if you don’t have tomato paste handy. Another good combination is potatoes and believe it or not cilantro in your chicken soup. It’s absolutely amazing

      Yes! I've done all of these except the potato. I like zucchini in the soup better, just for the texture.
      And my favorite version of this uses half a jar of spaghetti sauce and half a jar of salsa, and instead of the rice I add elbow noodles.
      (Why yes, the first time I made it I WAS cleaning out the leftovers from my fridge, how did you guess?)

    A bowl of this would be perfect right now, since we've been invaded by frigid air from the Canadian tundra! I have leftover chicken in the fridge right now, but gotta do holiday cooking.     I don't use tomato paste more than 2-3 times a year, so the tube works best for me. When I make a similar soup I'll add a full can of diced tomatoes because the tomato juices and the chicken broth marry so well together.
    And since you raised the idea, yes, please, do put up a video and recipe for split pea soup! Many of your TH-cam friends would love to see your spin on another classic, especially if it starts with "I went to the grocery store to get ham for soup, but I saw that [fill in the blank] was cheaper, so..." I LOVE the way you shift gears for practical reasons and then turn out a beautiful meal.

    Looks fantastic as always, Glen. Treating chicken soup as a template like this is, I think, the most authentic way possible. Thighs are always great too!
    On a totally unrelated note, I have been making your Montreal style bagels for what feels like years now--it is a peerless recipe--and have done some experimenting. I added a few tablespoons of baking soda to the bagel soak (to emulate the New-York alkaline soak) and they turned out absolutely incredible--perfect mahogany brown and blistery on the outside and still chewy and moist on the inside. I also do them on a pizza stone in a 500f oven and it really helps.

    Glad you had a good Solstice! I wondered when your weather would hit up there. Our portion of Elliott is in the rear view with little more than snow and low temps. We will be in the 40s (F) after Christmas. Merry Christmas to both of you! I make bean soup or potato soup with leftover ham most often.

    My default chicken soup is a riff off of chicken tortilla soup so the tomato paste didn't register as odd at first. Just switch out the celery for peppers and change up the seasoning and you'd be most of the way there. Add some corn and black beans to bring it even closer to chicken tortilla soup territory.

    I make something similar with leftover chicken, turkey and beef roast. Never tried adding tomato paste, will have to try it next time.

    I made this recipe today with a few changes. It was very good. I started with chicken dark meat still on the bone and after some cooking separated out the skin and bone for stock. I later added cooked chicken breast as suggested. Instead of rice, I used gluten-free elbow macaroni. No tomato, but with porcini mushroom slices added for the umami. It's not red, but it's still wonderful!!! Thanks, Glenn!

    I use quite a lot of tomato paste too but I do keep a tube in the fridge for times when you just need a smidge. This looks hearty and good. Love cabbage.

    You are so correct on the tomato paste thing. I haven't priced the tubes, but if I can get a 5 oz can for 0.69 or so I'm going to come out ahead even if I just toss the other half of can.

      And it comes in a metal tube, so you’re not gaining anything in terms of the “tinned tomato” taste

      @@tuniemert true, though Cento claims their paste in a tube has a more robust flavor than their canned ones. I’d say the tube version is worth the money if you’re using very small amounts here and there. But if you’re like Glen who uses a lot just get the cheaper cans

    I make lots of soup, and no matter what kind I'm making, I invariably add some sort of tomato product to the mix. Tomato paste, leftover canned tomatoes or sauce, any of those work. I even add tomato to split pea soup (a German version). It's all good. I use canned tomato paste, but always have a tube for those times when I just need a tiny amount. An easy soup for leftover ham - diced ham, cannellini beans, mirepoix, chicken stock and a tin of diced tomatoes in juice - bay leaf, garlic, and herbs of choice. A friend gifted me with three little tins of herb mixes, all containing lavender ... haven't used any of them because of the lavender.

      You know what, I can kinda see what you are saying lol. I like rosemary, but too much of it does definitely have that unpleasant 'soapy' edge that blue-cheese mold can have.

    Herbs de provence is my favorite herb blend especially in white clam chowder. I have raised my daughter using it too. When her friends taste her soup they always ask her what she put in it and when she tells them they're like I've never heard of that so I'm happy to see it used ☺️

    Thank you for answering about the tomato paste. People don't seem to grasp, I guess, that as great and concentrated tubed tomato paste is, you have to use so much if you are someone who uses it in many dishes - you would be buying it to no end! As you say, it isn't cheap and it really isn't feasible. If you want a dish where it just requires a tiny bit or you are someone with unlimited funds, I guess, maybe, but not affordable! Thanks again for another great video and Happy New Year!

    Chicken (or turkey), rice, cabbage and veg soup is my favourite soup of all time! And yes, it needs some tomato paste to give it a wonderful depth of flavour.

    This: buying the things on sale is saving so much money! And your channel is a fantastic example of how to deal with it.
    I've just made chicken soup with a whole chicken. I do render the fat of the skin for sauces. Later roast it, until golden brown and cruncy. To sprinkle that on top, when serving. I put the bones (with more bones from the freezer) back into the soup, to create a really strong broth.My broth to cook the chicken was completely made with cut offs from veggies.
    The chicken meat was full of aroma, already. I love to cook noodels, when making the final soup.
    Have some chicken fat and broth for further use. More meat, than I can use to serve 2: I fry it up for some burgers.

    When u said ham first thing I thought was split pea omg I put my smoked ham bone in my slow cooker with onion carrot and celery just one of each and I leave it for 8-12hrs and then strain it and make split pea and ham soup with the stock its really good

    Good call on the chicken. Chubs of pork breakfast sausage are way cheaper than ground beef too and add a nice flavor to whatever I'm cooking.

    After Thanksgiving our favorite meal is wharcwe call carcass soup. In goes all the bones, any lefterover meat, skin, gravy and if there is any stuffing it goes in also. Then the obligatory inion, celery, carrot and rice. Its do good. Best part of Thanksgiving

    Looks like Mennonite Cabbage Borscht to me. Grew up with ours made with chicken and whatever canned tomato product were around. I'd love to see some Canadian Mennonite recipes on your channel

    Thank you for saying the squeeze tubes of tomato paste are too expensive. The cans are only 76 cents where I live, I can’t imagine the mindset of someone willing to pay the insane premium for the tube.

    This would so work with ham. I make ham stock so I would sub in that. and as i don't add salt to my food in general, no added salt then. I so love a good soup recipe/method. will be doing this sucker in the next few days.

    As to the tubed paste: Even if you dont freeze it, Its usually cheaper to just throw away the excess in the can than to spend the extra for a boutique solutions like the tubes. In most cases you are throwing away less than 25 cents of paste. No big loss.
