    I know this will just get lost in the sea of comments but,, I'm a teenage girl and I have autism so I constantly feel like an inconvenience to my family. but your videos have taught me so much, and I've been inspired to do things like dry parsley from my little herb garden & turn it into parsley powder (which people have been using!!) or bake fresh bread! your videos inspire me to be more self sufficient. I have becomr interested in things like canning and preserving and I've loved plants & gardened for years but this year is the first time I'm trying to grow tomatoes from seedlings. they're getting so big 🌱
    plus, these videos are just such a comfort. they're really nice to watch when I'm overwhelmbed. so thank you :-)

    Hey Becky - Just wanted to comment on the 'extra' cinnamon sugar you transferred into a mason jar for future use, and then put in an unrefrigerated drawer. Given you used it to roll raw cookie dough balls in I just thought it prudent to mention the cross contamination (raw egg, uncooked wet flour, etc.) that has now been in contact with the whole batch of cinnamon sugar.
    I often have left over cinnamon sugar when I make chocolate ginger cookies or snickerdoodles and as someone who doesn't like to waste ingredients, I will take the extra and store it in the freezer, as a way for me to be able to use it safely on the next batch of cookies.
    Know I mention this not as a criticism but just for your safety. =)

    suggestion: before juicing your citrus, zest it first. Freeze dry or freeze the zest to have on hand for future projects - like marinades :)

    Becky has inspired me in so many ways. Gifting the workers with home baked cookies was so heartwarming. So, today I gifted the workers from our county water district who were replacing the main water system on our street. I gave them home baked cookies. I love spreading the joy!

    I can't seem to be able to dedicate a day/time to make freezer meals.... but, Becky has inspired me to start doubling or tripling recipes so we can have one for dinner and 1 or 2 to freeze and it takes almost the same time to make 1 as it does to make 3! We've found a couple casseroles that are EXTREMELY forgiving, can use up some stuff we have on hand and they freeze great!

      Just a couple of days ago I clicked on a link things it was a Acre Homestead video. It was not, and the whole concept was ignorant and petty. As I pointed out to the poster, I will never understand why folks want to spend their time and energy hating, tearing ppl down, and criticizing. All over extremely small petty things. That is certainly not what Becky does. Becky stays in her lane. She "lives" life. She walks the walk, and shares what she loves with the rest of us. She has blessed me in so many ways., and I am ever so grateful. Hopefully our appreciation and our voices of thanks will drown out the negative. Hugs

      There are forums that like to tear down all the TH-camrs I watch. All stems from jealousy and a little bit of Karen’s. Same girls that are bullies in real life. They have no self worth and get a kick out of tearing others down. Becky and the others can laugh all the way to the bank. I enjoy her videos and I don’t really watch to recreate anything people do in their videos. I just find these videos relaxing. Sometimes they give inspiration to try something new, but mostly because there is nothing decent on TV.

    Thank you for sharing your recipes. A lot of TH-camrs put them behind a pay wall. I’m 75, on a fixed income and I’m trying to cook with more fresh ingredients for my husband and I to aide in keeping us as healthy as possible. Found your channel almost from your beginning and have been following ever since. My husband is the gardener and I am the cook😊

    I lived in Hawaii a long time. Put the onions, carrots (grate on smallest size) and vinegar on while it's hot. LET COOL to room temp, then add the milk and mayo with your seasoning. Best ever! Mahalo

      I manage construction worker teams... She’s extremely nice to them, but seeing the kind of tricky slope and attention to detail she and her husband have, i’m sure they might like to go to an easier job next time. Alternate hard jobs you’re proud of and easier jobs keeps my teams’ morale up

      I'd love to see homemade treats for them! My dogs love carrots, peppers, broccoli, green beans and spinach. They love getting a taste too when we are cooking. They get to eat what we are eating which is mostly vegetables since we don't usually eat meat. They get their dry dog food with a sampling of what we had on top. Our dogs over the years have even enjoyed salads which upset my husband's grandmother! She told everyone that my dogs ate salad. My aunt always had dachshunds and was told to get them to eat salads and vegetables for their joints. My current dogs do not like salad or tomatoes and will pick them out of everything.

    If you have a banana, put it in a brown paper bag along with your avocado, close the bag and leave it overnight. The time it takes to ripen depends on how underripe your avocado is. The ethylene gas produced by the banana is trapped in the bag and speeds up the ripening of other fruit.

      You don’t need any other fruit in the bag. An avocado in a paper bag overnight will ripen.

    I peel a ton of ginger and blend it with a little water and freeze in once cube trays. Then bag up. It’s so nice to add a cube to different Asian recipes, or just to a smoothie

      That is a great idea. I have been buying my ginger from Trader Joe’s in the frozen section, it is already peeled and in cubes. They also have garlic like that as well.

      I used to slice lemons, to get the seeds out. Then blend the whole thing and put in ice cube trays. I would put one w about a half cup water and drink it. (Remember to brush your teeth)or put a cube in a drink, great in Crystal light.

      You can also just toss the whole root into the freezer and just pull it out and grate it frozen. You don't even need to peel it as long as you wash it first.

    Becky I place the root ends from green onions into a shallow dish. I plant them and I have green onions all summer, I just use a knife to slice the onions. It’s so much fun.

    Becky I'm not sure if I saw this correctly, but may I suggest that if you make extra cinnamon and sugar to store that you separate it out before you roll cookie dough with raw eggs and butter in it.

    I did some meal prep yesterday all inspired by you! Sausage and egg biscuits for the freezer, no knead bread, 3 pounds of cooked ground beef in the freezer, and washed produce ready to eat in the fridge. Today I went to Costco and bought some things I am packaging up to store in the freezer while I watch this video! I already have cookie dough in the freezer thanks to you too.

    I love cowboy caviar. It is the perfect warm weather salad. My recipe calls for blackeyed peas along with the black beans. I recently introduced it to my group of friends, and now I am required to bring it to all game nights.

    As long as you wash it well, you don't really have to peel ginger if you're going to grate it or slice it. The skin is perfectly safe and unnoticeable in any recipe you make.

      Her videos are not always in order. She also said somewhere in the last few videos about how she read in the comments not to “sharpen” the knife over the board and that it’s not a sharpener but a straightener. But we see her do it in this video.

They are going to remember because the worker said not everybody shows such great appreciation. But hopefully Becky is inspiring other people to maybe do these things for people that come to their home.

      We had a friend make cookies for workers when they added a new porch on their home - such a simple offering, and the construction crew almost hated for the project to come to an end! LOL

      I know not everyone does this, perhaps a bit of an older etiquette, but I thought it was just good or appropriate manners to offer visitors and trade people something when at your house. On a hot day, make sure you provide cold water, cookies, maybe a bit of fruit, to refresh. A little treat for the babysitter. A simple cup of tea.
      The bonus for trade is that they may be more likely to do a better job, be inclined to help you with something and feel good about their day. It may help with a future endeavor. Isn't it nice to make someone's day a bit brighter; think what they may do for someone else.

    Another video with some great tips. I get my Korean chili flakes at one of our local Asian markets in Vancouver. They have tons of interesting flavors, noodles and vegies to use in your cooking. I make lots of Kim Chi and use their Thai basil in salads and pesto. I really recommend exploring ethnic markets -- middle eastern, Ukrainian and Hispanic. One of the perks of living in a diverse community.

    KITCHEN TIP: Save citrus rinds and run them through your garbage disposal. The citrus juice and oils will cut through and loosen all the gunk in your disposal. You will have a citrus scented kitchen and a clean disposal! BTW, the citrus rinds will help sharpen your disposal blades. You can also use the citrus rinds with white vinegar to make your own spray cleaner. Just soak the citrus rinds in the vinegar for two weeks or more, strain and add half mixture and half water to to a spray bottle.

    Becky, I have to tell you I made that Hawaiian Mac Salad for a family bbq last weekend. They ate it all up! I even doubled the recipe! My sister-in-law said it tastes just like the mac salad at their favorite Hawaiian restaurant (in WA state). It was very simple to make & SO yummy! Thanks for sharing!

    Hi Becky. I keep my fresh raw ginger whole in freezer. Then when I want some I just micro plane as mush as I want. It grates up just fine frozen. Pop the rest back in freezer for next time. If you have thick skin or particularly don’t want any skin bits. Just peel before you freeze it. 🌸

      I have been making Sniickerdoodles for 50 years when I found a Good Housekeeping recipe. I was intrigued by the name and its been a favorite family cookie ever since.

    I think cardamom would be a great replacement for snickerdoodles. I make a cardamom sugar for palmiers and everyone goes crazy for them. I had no idea a cinnamon allergy was that common.

      @@tammymanuel9158 I use the cardamom caramel palmiers recipe from Serious Eats. It’s really really good and looks impressive for how easy they are to make. I go a little heavier on the cardamom then the recipe calls for.

    Big no no on storing the excess cinnamon sugar after rolling the cookies in it.
    Raw eggs where in the cookies touching all the sugar and cinnamon.
    Cross contamination could cause you to become very ill with future use.😝

    Suggestion: sharpen and hone your knives over a surface your not cutting your food on. There are specs of metal that come off and you don’t want that in your food. Love your videos!

    @acrehomestead Becky in the south for cowboy caviar we use black eye peas instead of black beans. Totally different flavor!!!! U should try the black eyed peas instead next time you make the cowboy caviar!!!!

    I do cinnamon sugar using brown sugar instead of white sugar. I do have to put it in my blender and pulse it just a few times because it doesn’t mix easy like white sugar does with the cinnamon. Then I store it in a my spice jar. The brown sugar is a game changer if you love cinnamon sugar!!

    Becky, tonight we tried your Cowboy Caviar WOW!! is that amazing! It is very similar to a Texas Caviar that I have made for years, however the fresh lemon really takes it over the top. That you so much for sharing your recipes and being such a positive person! I appreciate you!

    One of my favorite variations of Cinnamon Rolls: Use Clove and Ginger instead of Cinnamon, and instead of an icing topping, I just use Honey as a glaze. It gives that seasonal spice and sweet and they are delicious! I am not allergic to Cinnamon, but I made this one time when I was out of Cinnamon and became my favorite way to make them since.

    Better Texas Cavier Ingredients:
    Dressing: ACV, EVOO, Sugar/honey
    Black eyed peas (essential to the historical recipe), Black Beans, Red Onion, Green Chili's, Pimentos, White Shoepeg Corn, Multi-color bell peppers
    I wouldn't use the fresh tomato or avocado because it would really limit the shelf life, or I'd only put that in what could be consumed in that setting.

      I made my own the other day too. Loved it. I did have trouble with my molasses clumping up in my sugar though. Any suggestions? Not sure what I did wrong. It was still good but some clumps remain. :(

      Homemade brown sugar makes everything extra gourmet. I just made B'B'Q sauce with homemade brown sugar and it's the best.

      @@indy5galI use my stand mixer with the wire whip and use a rubber spatula to clean the sides of the bowl a few times during the process. It takes a little while, but it’s worth it.

    Becky I think you should discard that cinnamon sugar because you rolled the raw dough in all of it and bits the dough remained in the mixture.

      This bothered me too. Usually you use cinnamon sugar in baking so maybe if she put it in freezer it would be okay but definitely not in the cabinet 😬

    Becky, I make my dressing for almost all of my salad type meals.( macaroni salad, potato salad, ect) . Mix your mayo, dalt and pepper, sugar, and vinegar in the bowl before you add all your other ingredients. You can taste as you as you go.

    One tip for ginger. You can freeze it whole and than grate iz as needed with the skins. Freezing it makes it way easier to grate and you have it on hand when needed. This trick changed my ginger game!😊

    becky -- lemon squeezing tip -- after you squeeze them cut side down turn them over -- cut side up and you will be surprised how much more juice you get out of your lemon halves!! :)

    I also live in the Portland, Oregon area and I grow my own ginger every year. Freshly harvested ginger is amazing. At the end of the season I freeze it and it's ready to grate and use when ever I want 'fresh' ginger. Lots of videos out there on how to grow in garden.

    Hey Becky, I just watched a video from Chef Rick Bayless and he said if you chop or shred an onion you create a sulfurous compound that will sour or spoil a salad,or a guacamole . It is the compound that creates onion breath or indigestion. He suggested to put the cut or shredded onion in a small strainer and run them under water before adding them to your recipe.

    I bought a shaker with a lid and make the cinnamon sugar for it. That way we can sprinkle on baked apples or dessert or cookies and oatmeal etc. And it’s always ready in my spice cupboard

    Becky I learned to make ginger paste in bulk and freeze as you do the garlic pucks. I also make garlic, ginger, onion paste. YT the subject to get the Indian cooking shows how to make the pastes. Game changer for all sorts of meals. Generally I stuck to garlic ginger paste and add my onions cause I enjoy texture of chopped or slice onion.

    Everything looks fabulous! I also love that you gave the tip about not using your knife to keep it from getting dull. You also said in another video about wiping off your knife after honing so as not to get shavings in the food. All of this information is really good for new cooks as well as reminders to those of us that have cooked for awhile. Always teaching. And I see that you also have a Cutco knife. I bought a set when I was 21 and they are still going strong and I'm 70!
