Chris S hi Chris, I would season at every stage! Seasoning before putting it on will give it real depth of flavour.. maybe a little olive oil and then rub some salt, pepper, crushed garlic, etc over it and inside.. good luck!
Hi, I cooked the chicken for just over an hour, but depending on heat, size of the chicken etc, it can vary. If its a small chicken (1.2kg) then just over an hour, for a larger chicken more like 90 mins. To be fair, because the chicken is steaming from the inside leaving it a little longer will be fine and won't dry it out.. Good luck!
Hey Craig, thanks for the comment! I usually go a little old school with stuff like this and just give a little cut to the thickest part of the thigh and if the juice runs clear take it off the heat to rest! You can play it safe with a meat thermometer, if so, you want an internal temp of 165F /75C. Hope you like my other BBQ videos!

I think a 'Theo twist' would work great with this in the oven - especially for those winter nights when it's just too cold to fire up the BBQ (he says like he's never stood in snow trying to light charcoal....:)! I'll keep you posted on any new videos!

How much did you have vents open and what yeh on did you run it at please looks great
sorry for the delay Ann, I had the vents open about half way at the bottom and ran it at about 180c

Do you close the vents underneath before you cook and only keep the top vent open?
Hi Steven, from memory I think I kept all the vents open to ensure the coals had a little oxygen to keep going. Hope that helps!
