Right around 175°C or 350°F would be a good target. And rather than raising the lid to probe the temperature with a quick-reading thermometer, I'd use a leave-in thermometer and run the cable under the lid. Pull temperature for the breast meat would be 74°C / 165°F, and let it rest for at least 15 minutes. (Dark meat should be 79°C / 175°F.)
What vegetables did you have cooking with the chicken?
It looked like carrots, onions, new potatoes, and parsnips.
I know some folks who would give a finger or two for that Carolina Blue kettle. Looks slick!
Tried this yesterday - the chicken and roast potatoes turned out perfect but the carrots and onion were burned on the outside

Hygiene after handling the chicken obviously don't apply ......... Scary.
sorry, I'm not seeing a problem as everything they handled, they cooked.... then there was an hour break so they would have washed their hands then?
What about the lid of the bbq! That you'll open before eating. 🙈
