- We don’t always have 4-6 hours to smoke ribs. On this walkthrough video, I’ll be showing you my approach to cooking ribs in 2.5 hours. While I usually prefer low and slow barbecue, these ribs bring some major flavor in a fraction of the time.
The basics:
- 275°-300°
- Cook for an hour
- Flip after the first hour
- Cook wrapped for an additional 30 minutes
Cooked on the @OklahomaJoesSmokers “Marshal” Centerbox smoker!
This should put you right at 2.5 hours, depending on the size of the ribs and your cooking temp!

Just bought the Marshal today. First time I've ever seen one. I almost bought a pit boss pellet smoker they were the same price at lowes. I like the drippings hitting the fire makes for some tasty ribs

Love my offset, this smoker is perfect for smoking with charcoal + chunks/chips. Easier fire/heat management. The offset shines with all natural hardwood. Thanks for the sub!
How's is the temp control? I have the Bronco and I love the flavor profile I get from the fat dripping on the coals but it's just not a very big smoker. This gives you the best of both worlds it seems. Would love to see you do something in "grill mode" on it.
The temp control is pretty spot on between 225-300 when smoking. Very evenly distributed in the chamber. Both temp gauges read the same once your fire is settled in. Grill mode coming soon bro, thanks for watching!
