I usually dry my rice grains out by baking on low and then I fry them, coat them with a spice mixture(cardamom, Saigon cinnamon & brown sugar) and make a cereal. I love your version as well. Thanks for sharing.
I love making these now. I actually add different flavors with the rice (kimchi, sunflower seeds and almonds, and others). They are amazing snack or lunch food. Thank you for this video.
wow I've never seen anything like that. I just buy the shrimp crackers and thats it. yesterday I made rice the way I saw it on the video and let it dry in the sun, and today I fried them. I couldn't believe how tasty, fluffy and crispy they are. My family finished everything haha koob khun maak maak na krub :)

What you said is what Thai called Khao Taen (ข้าวแต๋น). This is a northern Thai's name. For central Thai they called it Nangled (นางเล็ด) while southern Thai called it Khaopong (ข้าวพอง) Very-very common dessert in TH. You can find it anywhere from the street vendors.
I just made these and I love them. I also see what you mean about thinner crackers. I tried both thick and thin. I prefer thin. The thinner ones are pretty easy on the jaw (I have TMJ) and I find them to be tastier too. So, definitely making them again. (I dipped them in my Thai inspired coconut and sweet potato soup. Rice and the different types etc are complex and I find most people have a method that works for them. I would always just put any amount of water with my white rice, boil until soft and drain off the extra water. I recently looked at a lot of TH-cam videos showing different methods to cook white rice and the science behind it. I rinse white rice in a sieve until the water runs mostly clear. I then then use the absorption method which is 1 part rice to two parts water. It works out perfect everytime so I thought it might be effective for you as well.

So I made these using rice my daughter accidently over-cooked and I gave them a light coat with honey, soy garlic glaze and sprinkled some finely cut up bits of nori sheet... dangerously good.

I am eating rice crackers while watching this. These are sweet and hot and i think they are glanced with soya. They are round, about 5 mm thick and have a diameter of 2 cm and I think they have been fried as the rice is puffed. I would like to learn to make them because I LOVE them but they are expensive here.

I kind of have an urge to try them but also to try to spice them befoe they dry out and make a batch of flavoured ones.. with something like dry cheese or garlic powder oooor shredded peanuts...

I made pro incorrect as this way when I lived in the UK. I used to make them at home because they was so easy and inexpensive compared to the Chinese Takeaway.
I think you should coarsely break the "raw" rice crackers into panko-sized chunks and bread something with them before deep frying. Perhaps fish would take nicely to the light flavor and texture of rice crackers. I imagine an egg-based coating would greatly aid in sticking of the particles when they puff up.

Would a pizza wheel cutter work to cut them into shape. Have you experimented with something like adding pureed sweet potato to make a veg chip/cracker?

Thanks for sharing, by cereal does that mean that milk goes well with it? I would have thought that milk would have made it too mushy to eat.

I'm Lao and we like to caramelise palm sugar and drizzle it on the circle ones. Let the caramel dry and it's a perfect sweet snack.

I've had palm sugar with condensed milk, solid, and in balls. Never caramelized though.

Very good guide. I wouldn't fry mine -- I'd look for a way to maybe air bake them so they are healthier. But this is a great teaching tool.

Trick to make brown rice sticky: reheat refrigerated leftover brown rice in the microwave and brown rice becomes quite sticky

In India we call them Rice Papad! You can either deep fry them,roast them on the stove top or microwave them for atleast 50-60 sec 👌
