Could I edit my image in any photoshop type software (i.e GIMP, Inkscape) for Illustrator to pick it up, or does it have to be Adobe Photoshop?

Yes absolutely! Just import your image as a jpeg or png and you'll be good to go 👍

What about color? It can only do black and white, right?

You can “Expand” the image trace and use the Live Paint Bucket Tool to add colours 👍

Dansky you almost did everything in Photoshop just make selection black and path and shape - that you already know about

Photoshop is an optional step to get a better tracing result, but not necessary 👍
