I'd go further to suggest some kind of signature icon on top corner or red/yellow bottom bar to indicate an insight. Therefore when we fast scroll through for referencing - we can find the insight marker when fast-forwarding or rewinding.

Yes, you choose which value you want to use. It’s the thing you do in step 3, when you reveal your cards. You can resolve the stress cards, then pick which value you want to use on the upgrade.
