    The Pago Pago cocktail may be one of the most underrated Tiki Drinks of all time. Jeff the Beachbum Berry has credited this recipe to Ronrico*, and after reviewing some old "Chico Present *RonRico's Mixtro's Guide" that is definitely the oldest published version we've seen to date. Most recipes credit this one to "The How and Why" by Hyman Gale and Gerald Marco, but that is incorrect as they merely copied the entire Tropical Specialties section directly from Ronrico.
    The combination of rum, Chartreuse, and White Creme de Cacao makes for an unusual and interesting drink. The Pago Pago recipes are at the very bottom of the description.

    Pago Pago Recipe:
    3 chunks of fresh pineapple
    ½ oz lime juice
    ¼ oz White Creme de Cacao (make your own: • 2 Ways to Make a White... )
    ½ oz green Chartreuse
    *muddle all the ingredients
    1 ½ oz Bicardi 8 or another aged Puerto Rican rum

    ¾ oz pineapple juice
    ½ oz lime juice

    I liked the background and the ‘fake’ flickering Lanterns - saw one guy who hated them. I liked the 2 different cocktails. Makes me want to experiment a bit

      The more I analyze this, the more I think I'm going with the Trader Sam's version, but I think I'll serve it in a coupe without ice, and kinda combine the two!

      Thank you! I didn’t know pink pineapples were a thing. If you have a Trader Joe’s nearby they have the best store bought pineapple juice in the refrigerator section.

      @@makeanddrink I didn't either, until I saw one at a discount grocery outlet today - I felt like $10 was a big price to pay for a pineapple, until I got home and saw that they're way more if you order online. I expect the taste to be about like a normal pineapple, but hey, it looks cool!
      I'll try the Trader Joe's pineapple juice. I live about ten minutes from one. I was thinking of switching brands from Dole since I feel that it can kind of take on the metallic taste of the can.

    I tried this drink tonight. I found it to be tart and harsh. The lemon clashed with the cacao, and the chartreuse bitterized everything. The pineapple and rum were there in the background, but just barely. Basically, no flavor profile really jumped to the forefront. It was just lots of flavors fighting with each other.

    Just a note on a typo-- the specs in your video description list 1/2oz of pineapple juice in the Pago Pago no.2, but in the video you state it as 3/4oz.

      @@makeanddrink From the pour footage it looks like you went for 3/4oz! Also looking at the spec, since there's no syrup component that extra bit of pineapple juice sounds like it would help make up the difference against crushed ice.

    So in keeping with your idea of not being too slavish to the original, I've been playing with acid adjusted pineapple juice lately. So for your version, I removed the lime juice, doubled the creme de cacao and upped the Chartreuse to .75oz. It's a bit heady, but came out quite nice. Keep up the good work!

      That’s very interesting… so what process or what steps are you using to acid adjust? I’ve had an idea for a video on that for months that I’m thinking of doing shortly. Basically, a way to acid adjust in real time without much thought or prep.

      @@makeanddrink I used The Educated Barfly's recipe of 100ml fresh Pineapple juice add 3.2g Citric and 2g Malic (th-cam.com/video/JZUjOS4BaUs/w-d-xo.html) I live by Kevin Kos' Super juice lemon and lime.On the fly pineapple acid adjust would be amazing, would love to see that!

    I think it would be valuable after you finish reviewing each cocktail to ad a 4 seconds b roll with the recipe on screen like educated barfly does.
    For this recipe, i would toy with saline.

    This is clearly a well researched and produced video, and I love the subject matter. However, as a long time How to Drink viewer, I was confused when I clicked this video because from some of the set design choices, the apron/flannel combo, and even the channel name, I 100% thought I clicked on a Greg video. Now, he obviously doesn't have a monopoly on youtube cocktails, but you did have to win me back over in the video, because my knee jerk reaction was that this was a little too similar. It's probably mostly the shirt though.

      Actually, your comment is valid. I'm sure -when-*_if_* more people see my videos they will obviously get compared to other TH-camrs. I will put some of this out there now as a response which is more than you asked for but also if anyone else has the same reaction they can see here what I have to say.
      My journey into TH-cam was very naive. I didn't really start subscribing to channels until the pandemic. I wanted to make videos (not content) and my first thought was I'll be a "youtube cocktail guy." Did a quick search and saw what was probably Greg, or someone else with 1M subs, watched 15 seconds, and said "ok never mind that's taken - it's been done." Like I said, naive. Fast forward 1-2 years and I decide to jump into it. I had definitely watched Educated Barfly and several of Spikes Breezway Cocktail Hour (he's awesome, check him out) but once I started I intentionally avoided all other TH-cam cocktail shows. But then I realized that was dumb and I've watched dozens of HTD episodes over the last 3-4 months. If anything, I am trying hard NOT to be like other TH-camrs because I'm like you... I don't want more of the same.
      Copying on TH-cam is inevitable. Whether intentional or unintentional, it's impossible for the most part to do something new or entirely different. But it also doesn't work in style or substance. I literally can't pretend to be like someone else, I can only be myself or the in-front-of-camera version of myself.
      Make and Drink - Yeah it has a drink in the name. I spent weeks writing episodes, brainstorming, and talking to myself in the car and I kept saying "Today we're going to make and drink..." So for me, it came naturally. It also wasn't taken and at the time TH-cam handles were coming out so I knew there was no overlap with someone else.
      Apron - it's a trick... I've fooled you all. I don't even like the apron, but I already that one and it's a ploy. It's a little bit of instant "authority." If I had a camera review channel I'd wear CUTS t-shirts. If I talked about Bourbon, I'd wear Oakleys.
      Shirt - yeah it does look like his but mine is purple and orange. I do spend WAY too much time thinking about what shirt to wear but I was tired of wearing the black one. It doesn't adequately bring out my tired and bloodshot eyes.
      Bar/Set - it's a copy of a bar in Healdsburg CA I went to days before starting to build it. No one else gets a monopoly on wood.

    Why do you pronounce it with an n in it? It reads Pago Pago, not Pango Pango. Nice set but get rid of the fake lanterns.
