Fellow Minnesotan here. I used to teach in St. Paul and two of my colleagues were Lakota. One had a good friend who ran a shelter for indigenous women escaping harmful relationships. One of the ways they raised money was to sell fry bread tacos. Yvette would tell us a few days ahead and take orders for us. Then her friend or one of her employees would deliver them to school so we could have them for lunch. They were SO good! We were always asking Yvette when she was doing another taco day. Does adding sweet corn really make food uniquely Minnesotan? In that case, My tuna sandwiches, pasta sauce, and pizza meet that specific criteria. I don't have a freeze dryer; but, have used my food dehydrator to dry out corn kernels. The trick is to not dry them out too much. They add a bit of crunch to just about anything I put them in.
