Tbh, when a trial happens even if the person admitted guilty, usually someone finds the punishment unfair and thinks the jail time is unfair (I'm assuming the defendant).
@TWBarb you have to go to trial unless you take a plea deal. He pled not guilty so went to trial. A confession alone is not enough to slam dunk a case, also confessions happen all the time.

They didn't open the bags because they did not have a search warrant. They entered the van based in what is called exigent circumstances based in the fact that Emily was known to have been traveling in the van and may be in distress and require assistance. When entering private property under such circumstance law enforcement's (LE) search efforts are strictly limited to interior spaces where a person may be present or concealed. Because an intact living body could not reasonably be present or concealed in one if those trash bags they could not open them. Had LE opened those bags and found her dismembered remains that evidence would be in jeopardy of being excluded at trial if challenged by defense lawyers in a pre-trial motion. They did the right thing by knowing they needed a warrant to open those bags.
Okay so this is what happened - common amongst guilty people, he thought that by hiding her body and dismembering that no one would find her meaning he could come up with a lie to cover up his actions by saying shes misssing and he hadnt seen her. So on the phone with the cop hes speaking like someone who already has the cover story instead of actually telling the truth.
