I love Hossier cabinets, but this video is chock full of misinformation and exaggerated claims about them. The Hoosier was designed to consolidate BAKING supplies, but no homemaker would ever use it for "wet work": prepping fruit for canning, slicing vegetables, or chopping meat, for example. These folks were probably more aware of the threat of food borne pathogens than many of us today, so such activities would be carried out on surfaces that could be sanitized in the only way available: by sluicing them with boiling water. (The large "drainboards" flanking the sink were suitable for these tasks.) Furthermore, the vast majority of foodstuffs would still have been stored in root cellars or spring houses, so even though the Hoosier was marketed for "improved efficiency" (advertising's golden buzz-word in the late 19th and early 20th centuries), in actuality it certainly DIDN'T "revolutionize" housework.
