I'm making this amazing spaghetti tonight (on 7/31/23), Gina! I prepped the sauce this morning. I didn't use a whole lot of mushrooms; I used half a box of fresh mushrooms; I will do the garlic oil later when I cook my spaghetti; I added my tomato paste, roasted garlic tomato sauce, and a little sugar. I also didn't have Mrs. Dash, but I used garlic powder, onion powder, ground pepper, Italian Seasoning, and dried Oregano. I can't wait for my family and I to enjoy this tonight! I also followed your advice by tasting my sauce along the way. I had to adjust my seasonings. I then poured my sauce into my crockpot to let it sit on Warm all day until dinner time. All I have to do is cook my spaghetti and then make, and add my garlic oil to the sauce. I got my bottle of wine ready to go, too! Hi, from Southern Arizona!

Yes, my goodness who doesn't love spaghetti. I love cooking. Enjoying what you make is key. Cooking the foods that are fav's of each family member is truly a great feeling as the aroma fills your home. I always loved it when my husband and son came in from work and could smell it when they opened the car door to get out. Having them come in the door saying "Oh that smells so good." Really gives me/you the good feeling of, oh yeah! I know you're feeling it the way you said, taste it so you know what you are serving to your loved ones. (Sorry I haven't been commenting as I usually do. My husband has been having a hard, tough time of it these past few months. Feel in August, broke r.hip, had surgery, p.t, o.t,inpatient rehab 7 wks. Got home, fell twice, 2nd time did it really bad. Back in hospital 2wks, an into p.t, o.t.,at a different inpatient facility 2+wks. 1 more wk. and hm. I'm asking for your prayers Gina, we're 64. His spirit seems to have broken. I'm doing my best, but I'm having so many neurological problems, with an exacerbation of MS, Lupus, Fibromyalgia until I'm finding limitations are only going to cause him more difficulties. They did another doppler this afternoon. Came back clear. His Medicare won't pay anymore, so we have to go home tomorrow after lunch. I'm actually scared to death, there's something really wrong or that swelling would have been down at least 1/2. He can't put any weight on r.leg at all. I've told them my concerns. Just praying that God is going to take care of it. All I can do now. It's been a bad year. You have no idea how much I appreciate your prayers! An even that you came back to see how things are. Thank you so very much. Sorry, but I had to just quit my tablet away during the day to see if my pain would lessen, nope. God bless you and your family. I'll check back tomorrow night. @@AnnaH4R Anna, they came in Tuesday evening and told us that he had been given an overdose of potassium. This is what is given to prisoners who are being executed! They said that they were going to give him a nasty medication that was to IMMEDIATELY give him diarrhea as that's the only way to get the potassium out of the body. It didn't work. 4x more, still nothing. They drew blood, sent him to p.t.and while we were eating lunch, a transport to our home came to pick us up. All weird! When the driver was told I am blind, and have M.S., he told, well yelled at me how stupid I was and that he would not be taking 2 disabled people home. I've never been talked to like that. He left. Another guy came from the hospital district and went home. We have no idea what's going to happen. No idea if potassium is clear. I'll let you know. Thanks for your prayers. Linda, obtw, he left with a fever.
I always rinse the leftover sauce in the jar before discarding, you'd be surprised how much sauce remains in the jar..add a little water, shake and put in pot with rest of sauce.
MERCY! I wish I could give 1,000 'thumbs up' for this beautiful dish! There's very few dishes that are honest-to-goodness 'comfort food.' I love that this is so easy to put together, AND that you just KNOW it's going to taste like a million bucks! I can't WAIT to try this! God bless you, girl, as you continue to teach and inspire us.
Here is a tip about tomato paste in the cans my Mom taught me..... Use the can opener to take the the top off can. BUT LEAVE IT ON. Flip can over and cut bottom of the can off. Then lift the can up and push the lid through the can to push ALL of the tomato paste out onto a little plate or bowl. Both lids will come out as you push it. It will come out as a little thick "roll" of paste and you get all of it from the can. Ive opened my tomato paste cans that way for years

I keep my grease/oil away from my drain by pouring/draining my grease from the pan into a collander that I place over another pot; then I store my grease in a container, store in a cool place to recycle my grease with my county at a future date. I wish I were doing something 'special' this weekend lol! I partially cleaned out one of my storage rooms and took a trunk full of 'stuff' to the Salvation Army (more to go!) My husband installed a new doorknob to our deck (the old one was nearly broken). Exciting times! lol! I'm like you Gina - I use spaghetti sauce as a base for all of the other goodies! So delicious! Tonight (Sat) my oldest daughter made Jamaican jerk chicken and red beans & rice!

Hi, Gina. You make your sauce almost exactly the way i do - even down to the thin noodles and all of the same spices - except I use ground chicken or turkey. I like your tip about adding tomato paste, the warm garlic oil and the tri-colored peppers. ( I add usually add fresh garlic directly into the sauce, but your idea with the oil has me intrigued). I pour my sauce over my noodles separately and sprinkle shredded parm over that. I also squeeze 1/2 lemon juice into the sauce while cooking to give an extra kick. I'm going to try this tonight. I CAN'T WAIT! You have a great personality and are very organized to make it easier for us novices to follow. I agree with another poster that you need your own cooking show.

Since most recipes don't called for use of an entire can, you can freeze the unused paste. I like to freeze my paste in dollops of 1 tablespoon.
or scoop it with a spoon? lmao
Same way my Gmom and Mama taught me, and what was not used could be bagged and frozen for later use.

Hi, Gina. You make your sauce almost exactly the way i do - even down to the thin noodles and all of the same spices - except I use ground chicken or turkey. I like your tip about adding tomato paste, the warm garlic oil and the tri-colored peppers. ( I add usually add fresh garlic directly into the sauce, but your idea with the oil has me intrigued). I pour my sauce over my noodles separately and sprinkle shredded parm over that. I also squeeze 1/2 lemon juice into the sauce while cooking to give an extra kick. I'm going to try this tonight. I CAN'T WAIT! You have a great personality and are very organized to make it easier for us novices to follow. I agree with another poster that you need your own cooking show.

I start with a meat sauce as well, but I do half ground beef and half mild ground Italian sausage. If you ever try it that way, let me know what you think. Great video.
