  • In this video we see the arrival of the newest addition to the Fat Es BBQ arsenal. We have a new Large Insulated Vertical Smoker from Lone Star Grillz. In this video I show you the craftsmanship and quality along with features and options selected for this pit. I also compare it to my 24x48x24 offset stick burner from LSG as well. We look at the pros and cons and see what pit is best for what situations.
    We also show how we season up the smoker to get ready for its first cook and find out how much fuel this new pit uses vs how long of a cook it can give you.

    look here bro, that's a really nice insulated cabinet smoker...I actually ordered the Large IVS last year, custom painted and I must tell you; you're gonna love it!!! The way it holds heat on a consistent basis is UNREAL

    Looking forward to cooking videos on this pit. I’ve seen other channels make a few videos on this pit with great comments and then never make another video with this pit. They continue making videos with other pits they have. This is why i have hesitated pulling the trigger on this pit. I already have the same LSG stick burner you have and am on the fence for the insulated cabinet smoker.

    Love my mini but I end up switching top and bottom shelf to keep everything even no big deal. I am jealous of the cart wish I had added that to mine.

    Love that new rig only thing I noticed was the ash pan seemed to want slide out uncontrolled when you pulled out fire box easy fix. I must say I am jealous 👍

    Man you are going to love this smoker I have the insulated mini once you figure out when to close the valve to get the temps your looking for it will be like set it and forget it until food is done you don’t have to baby sit these things I put a brisket on close door and do whatever i need to do around the house go to the store fall asleep etc the temps always hold steadily.

    I'm in the process of buying a lonestar grill. I'm Torn between the cabinet vertical stick burner or the set it and forget it one. I have an old stick and looking for a major upgrade. Would love to hear your pro's and cons on each of them. I'm kind of leaning towards the mini set it and for get it one for the ease. However, would love to hear your thoughts and how the flavors compare? Any input would be much appreciated.

    I'm eager to see what the temperature is from the top grate to the bottom grate' I've been holding back of buying the same one because there's hardly no videos on the cabinets. But I'm super excited you purchased one because all your videos are very informative thank you.

      The temp all around held solid during the seasoning. I need to do a fully loaded cook so I can test it better.

    Can you overshoot the temp then dial it in to ease into the temp you want or do you recommend dialing everything down before it gets too the temp you're looking for?

      Jruss - I was debating the 24” vertical, 24” cabinet or the Mini insulated. I ended up choosing the 24” vertical as they are more versatile than the insulated cabinets. You also get the most bang for you buck on a $/cooking sq in basis with the 24” vertical. When I went to the showroom the owner Chris mentioned he has an insulated smoker at his house, “Cuz sometimes you just want to set it & forget it”. He also said the taste on the vertical smoker is “slightly” better on the 24” vertical but added, “...we’re really splitting hairs though”. You really can’t go wrong. There’s enough videos on TH-cam to verify this. Mine will be ready late June and it can’t come fast enough. Btw, have you noticed LSG is now offering 0% 12 month financing? Just saying.

      @@markstp95 sounds like I'll probably end up with my original ideas of the 24" vertical. The insulated seems to be a set and forget without opening the door much. But I like to wrap certain meat at different times and also like to do side dishes. Plus the cooking surface is much larger

    That is awesome piece of equipment. I have the 36" cabinet vertical off set by Lone Star. My wife and I are trying to get a catering business off the ground but I think TX law prohibits selling food cooked out you personal/home kitchen.

      I would definitely hit up your city government sites and talk to some people. That’s what I had to do. Including talking to the health inspector. It’s not hard just tedious. Good luck!

    Nice pit! Note to self, it would be a good idea to mention or suggest that when uncreating this beast, to cut off the post on the left side to avoid hitting the thermometer. I felt it when your eyes got big after the hit!

      For your water pan take 4 aliluminum half pans across the bottom and fill them with water. Makes clean up easy

    Just curious about the seasoning process. It sounds like you coated it with oil and then brought it up to 225 degrees. Seasoning oil does not polymerize properly lower than 350 F. Did you just skip that part on the video? I just thought I'd mention that because a lot of people fail to realize this about seasoning cast iron or carbon steel or whatever else

    I have both a stick burner and an insulated cabinet from LSG. Had I known then what I know now, I would have bought the insulated cabinet and never looked back. It is so hands off and fuel efficient why use anything else.

    Can you use lump charcoal vs briquettes?

      You can but I have been told that since they vary in size that the burn consistency is not as good as briquettes and that they burn a bit hotter. I have not tried though.

      Fat E's BBQ haha yeah that’s what I meant. It probably wasn’t the best term for it. Backing tracks are more live production but it was what my fingers typed out at the time I guess. Good stuff man!

      I had to wait 20 weeks! But it was worth it.
      I got a 24x36 offset with just about every option. So don’t be surprised if there is a wait. But just call or email Chris. Super good dude.
      If I could buy something else from them I would.

      The 24x36 comes standard with both! No need to choose. I was gonna go with the 20 box’y model but I’m so glad I didn’t. This thing sings at 275 all day. And is a Smoke ring machine.
      If I did have to say 1 negative thing it’s wood hungry. The reviewers on TH-cam say every 45-60 minutes to add wood. I found it’s 30-40 minutes. Hope that helps.

      I was told you can use lump charcoal, but that the
      Lump doesn’t burn as consistently because of the different sizes and shapes. Briquettes are all uniform and apparently burn more efficiently.

      It’s there schuylerdr. If you click large IVS smoker, the you will see three options on the right. There are three rectangles with the options descriptions inside. Mine is the third option. Large IVS with competition cart and off road package. If you are looking on your phone, it’s at the bottom. Under the words “base model” you will see the other two options. “Mounted to competition cart with 8 in wheels” and the last one is “competition cart with off-road package.” Tap them and you will see the price change. Hope this helps.

      Honestly I would suggest speaking with your city government offices. Its a pain, but you will get all the correct info and keep yourself from forgetting something important. Talk with your health inspector too. In San Antonio you have to have a commercial address for your business in order to cater to certain venues. So a trailer could suffice, but it's a huge investment. Again talk with your Health inspector so you can tell them what you want to do. like what kind of catering in detail and they can tell you exactly what you need to do to become legal. Good luck I know you will do great!

    Nooooo don't use that nasty pam to season your pit brother...grape seed oil or on my big pit when I built it I put a thin coat of bacon grease then cracked up the heat for a couple of hrs to season the new metal.

    It’s too bad their prices are super high or so it seems. I know it’s worth it and it’s quality work but when I hear people getting free grills and doesn’t seem like genuine appreciation for the grill since it was literally free unlike you and they can just fork them out to the “influencers”

      Hey PJ. Yea these pits are not cheap. It is definitely an investment. But I will say it’s one I do not regret. I can honestly say I was VERY skeptical when I was first about to make the plunge in a high quality pit. I had always used like char grillers and other pits from Academy. Though there is nothing wrong with those and you can still get a great cook out of them, I just feel my beast and now my new monster have made it that much easier for me to get a great quality cook completed along with a high volume of food. There’s less chance of error or temp problems I suppose. I went with lone star because the made me feel good and confident about my large purchase. They didn’t try and up sell everything. I felt they really wanted me to be happy with my new adventures rather than them making a quick buck. Some other companies I talked to made me feel a little insecure and gullible. Maybe it wasn’t intentional, but I felt like I needed to be an experienced pit master and know the ins and outs of competition pits when i talked to these other companies. Almost like I didn’t belong. Again I’m sure it wasn’t intentional. Even watching some of their videos I was intimidated. LSG made me feel like it was okay to be a novice and dive into the professional pit world. And now I feel I have learned so much more.

      Fat E's BBQ honestly i know the pits are top notch I just hate that they give them away to people who are “Influencers” and they don’t really even use it. And there’s like 5 or 6 people I can think of who have pits they got for free but we have to sit here and spend 5k on a pit
