      I like the layering of the fresh vegetables as compared to making and cooking the soup before canning it. When I have canned fully cooked soups, pressure canning turns it really mushy and tends to bring out strange flavors from the herbs.

    You are so inspiring. My mom was a big vegetable canner and has developed dementia and can no longer do it. She wants to give me her pressure canner, but can’t part with it yet. When she does, I intend to use it to make some of your soups for her and my dad who has his hands full running their cow calf farm. Knowing they have shelf ready food will be such a relief for all of us. I make things and freeze them, but their freezers are pretty full of beef after butchering. Thank you so much for sharing these videos, they’re really helpful. ❤️

    I can 7 qts beef separately from 7 qts of potatoes and carrots. 90 min for the beef. 40 for the potatoes. I get potatoes and carrots with better texture due to the shorter times. Serve then 1 qt beef, one potatoes and one carrots mixed together into a pre made roux to heat up.

    Wow! What a day! That's so awesome that you could get all that done. I only have a little Carey electric pressure canner so I can only do 4 quarts or 5 pints at a time. But that's ok for my needs. Are you planning to get another electric canner? Also, I saw all that tomato juice left in your pan. Another option could be dividing it up and dumping it into the jars in place of some of the water. I'm glad it was so tasty! It didn't look like you put any herbs or flavorings in it. Just the deliciousness of the veggies, I guess. Well, I'm off to can my beef broth 🙂

    I also use the harvest guard reusable lids. I have not had any issues with them, though I was dubious. Now I am going to purchase more of them.

    Chelsea- I’ve used golden harvest for decades since a teen and my mom and grandma used them. Never any issues and they are cheaper. Great jars too.

    I bought some gold harvest jars a few years back. Dollar general use to sell them here in the lower 48. I'm not disappointed in any way. Seems to be a good product. Enjoy!

    I have several old, well used golden harvest jars. They have gotten more difficult to find where we are in the Southeast. I love when i happen upon the 1/2 pint jars for jams because i gift those for Christmas and they are a bit less expensive. I have a steam juicer that i haven't taken out of the box but that apple juice is so beautiful and i have a bushel of apples to put up and you have inspired me to give it a try.     Chelsea, I have seen a lot of people use Golden Harvest jars and I thought I remembered Golden Harvest being a cheaper brand put out by Ball, so I googled it to make sure. Here's what I found, "Golden Harvest brand Mason jars for home canning are a lower-priced line of Mason jars sold by the Newell Corporation, which also owns Ball, Bernardin and Kerr jars." So, go ahead and stock up on them; they are quality jars!
    Thank you also for your videos. I think I found you about a year ago, or so, and I have learned so much from you! I also love to see all the beauty on your property. What a beautiful place to live! (Cold 🥶❄️🥶, but beautiful! LOL) I really enjoy it, so thank you for sharing!

    Recently I canned a taco style soup. I used the beef pieces that I got off the beef bones when I made stock. Last year I made a pulled pork soup ( I will be doing that again) chicken soup base and a black beans soup. I will be makes more soups.

    Chelsea, I use Golden Harvest now for about 3 years and have not had a problem with them. I use them with pressure and water bath canning.

    I actually love the Golden Harvest jars. I find that down here in the states, I can get my half pints for pretty cheap, and I use quite a few of those for jellies, salsas, hot sauces, etc. and making single meals for my mom to have on her shelf. I have not had any issue with them and have been purchasing them for around 4 years now. How funny with your lids, I had to tell my husband what happened, that was a once in a lifetime thing, I swear! Sometimes it is hard to see that you have two, been there. :) Great job canning all that yumminess, Chelsea! :) Beautiful work!

    My Pea and Ham soup is more like a Stew than a soup as I like thick and chunky. Potatoes, onions, carrots,celery, corn,Swedes, parsnip,turnip,yellow and green split peas also a mixed soup mix. I like to roast my ham and bone before boiling the bones. I freeze what is not eaten as have no place to store glass jars except for in the Attic and that is way too hot. I miss canning with my Grandmother and Nana as they had special storage rooms built for them.

      If you have a spare bedroom you could buy a small air conditioner and place it in the window $200 new or buy a used one for less - cover the windows with blackout curtains Ta Da cold-room🤗 I even got a small motion fluorescent shop type light so when my arms are full light comes on when I walk in👍🏼 but I’ve even seen people store canned food etc under beds in closets etc😉

    Can't believe your work ethic! I guess every region develops their own habits. We have an assembly line for tomatoes - boiling, skinning, seeding (thanks for the info on using the skin and seeds - it's been going into compost). To tell the truth we don't use lemon, I use fresh herbs - rosemary, basil, oregano, thyme, tarragon, sage - for different sauces. We get three pots of sauce and one of tomato jam on low and gab a bite. It's all downhill from there. Great video.

    I am a huge fan of canned meals! I make a lot of chili (Hubby's favorite), ham and beans, deer and veggie stew, and ones like you make. Way handy!

    Garden Harvest is significantly less expensive here in the US as well. I have been buying their jars and lids all summer. Zero failures as well. When you are buying 12 to 20 flats it saves a lot of money. My favorite jar use to be Kerr. They are not even available in my area any longer. When I looked online, Omgosh they were ridiculously expensive. They are slightly square. They fit nicely on the shelves. I only have a few hundred of those left that I started purchasing in the 90’s.

    Yup, I make up my own recipes all the time. I often can just plain dry beans ( I grow Rockwell, Orca, and Abenaki and usually get about 7 -10 gallons of dry beans after shelling and drying) looking forward to seeing your white bean recipe. But I do like having the plain beans because I often like to be creative when I cook on a daily basis. It is just the two of us, so I realize that is easier since we have no children. Of course we have virtually no electric equipment here on our homestead so everything is b6 hand… chopping, slicing, washing dishes ( I made an exception with the washing machine ).

      I love the spicy squash soup from the Devereaux canning book. It is par excellence. I usually do it with sausage. It is so much going to the basement to “go shopping”. Everything I can is grown here on my homestead. I do. To go to grocery stores. I buy a few basics from Azure Standard.

    I have used the Golden harvest jars before and quite liked them for steam canning. I have never used them for pressure canning so I hope they work well for you.

    I'm new to pressure canning. Its really interesting to me to see you pack the jars cold and raw then add the hot water to heat the jars. I'm curious, though, when you pour the hot water out to add cold water, don't you lose your salt and if you had added any dried herbs or minced garlic? I'm keen to try this method. It looks super efficient. I'm also inspired by you running two canners at once! Seven often feels so limiting for the time it takes. Thanks for all the tips!

    Always such a pleasure to watch you can your delicious food! You’re so inspirational! My husband and I went to a Concord grape farm and picked beautiful grapes. I’m using my steam juicer right now and hopefully will get at least a dozen quarts of juice. ❤️

    21:22 I’ve not had great luck with the Golden Harvest jars - they seem seal okay, but in my experience, they then lose their seal during storage at a much higher rate, so keep a close eye on them in your storage.

      I "found some Golden Harvest jars that I had canned in 2004 stuck way back in a closet shelving area. I did not know they were there. Sometimes, my mother would hide jars of her favorite stuff, so I would not eat it. 😂. They were still perfectly sealed after 16 years. I have never had one break, either. To be honest, I only used 8 and 16 oz jars. I can not remember using quart jars. We did not use quarts except for pie filling. They are quite commonly found at Walmart, in the US. I also have used Anchor Hocking 8 oz jars. Those were great for jams, rallies, chutney, etc. They are shorter and fatter, with a regular mouth. They are a great size for gifts. I really was happy seeing this video yesterday. It was just what I needed. I took stock of my freezer, and I am canning everything that I am able. I am trying to reduce my reliance on my freezer to hold my food and only use it for necessary items or to hold stuff until I can process to shelf stable. Thank you for this video.

    I bought the golden harvest and I’ve had two of them break both inside my pressure canner. Very frustrated and I swear I’ll never buy that brand again!!!!! So just wanted to share that with you. I also bought them because they were cheaper than the regular Bernardin jars. Anyway I hope you continue to not have any more issues! I never knew you could put cores and skins in a juicer and get apple juice! I thought the only thing you could do with them was make apple cider vinegar.     Golden Harvest has been around for a very long time in the states. I have a lot that are very old but never had a single problem with them. So, don't worry. You must have a battery backup in your body somewhere!

    In my experience, Golden Harvest lids seem to have a shorter life expectancy in that the seal loosens over time. Personally, I would toss those lids. Nothing worse than having something in the pantry go bad.

    I timed it one day. From loading in jars of green beans (25 min) cook time, until removing jars was 2 hours. That got me 7 quarts. Hard to imagine doing so many jars in one day. I know you run multiple csnners, but I am afraid to do that on my stove.

      I was canning until 10:30 so it did take some time for sure.

    I’ve used golden harvest jars for years, no problems ever, they may be better than bernardin
    In my opinion😊

    Soup has always been synonymous with cozy for me. So it looks like you're family will have a very cozy winter. 😊 I'm curious what your thoughts are on water bath canning everything like the rest of the world does? I know it takes twice if not three times the time as pressure canning. But besides that, what other thoughts do you have on it?

      I don't know enough about it to comment. I've always used a pressure canner for low-acid foods.

      I boiled them for 2 minutes and let them sit in that water for an hour.

    So question: is it no longer safe if there was a bit of siphoning and the final product doesn’t have the correct headspace even if the lid still sealed?

    Can anyone give me some suggestions to stop jars cracking in canner. I’ve Never had this problem and this year so far I’ve had 4 that the bottoms have cracked right off in the canner, using both steam canner and large pot.

      Big temp change does it - or are they newer purchased jars? It seems that so many things are made cheaper now😡 or be extra careful sometimes accidentally knocking the jar on the canner when placing into canner will weaken it🫤
