  • Guys, after this video recipe I can confirm that Marco Pierre White is not able to cook Italian food, and that you cannot trust him when it comes to Italian cuisine!
The dish he made is sad and doesn't make me want to eat it, and I think this is the worst thing.
A recipe should make you hungry and and it should make you want it... but that's not the case! What a disappointment!

There's two reasons why I respect Marco Pierre White and it's because of the following phrase: "No I didn't make Gordon Ramsey cry, he made himself cry. That was his choice to cry." and he actually achieved getting a 3 Michelin stars, which you don't simply get so he must have been doing things right at some point in time.

He never said Sofia Loren made it, it was some famous Italian restaurant back in the 60s which made this dish and named it after Sofia Loren. It was probably made a handful of times and something that time forgot, but Marco being in the circles that he was back in the day, it was brought to his attention through word of mouth. You should be better than that.
How about you cook it, like he does, then judge it?
By the way, the sauce will reheat the gnocchi, which are kept warm by the hot dish. Many ways lead to Rome.
Also keep in mind that white has a background of a professional chef, not a home cook. As such, pasta and gnocchi are often prepared, like half done, so they barely need a quick reheat.

A lot of Western non-Italians work with bagged shredded "cheese" which doesn't melt so they're unaware how easily fresh-grated cheese melts. MPW should know better. It's not what you put in, it's what you leave out. Recipes "evolve" (sarcasm) and that almost always involves adding ingredients compared to the original recipe. This is where recipes and chefs go wrong, adding things... it upsets the delicate balance of a dish, where the base vegetables are so important. You don't need to add herbs, garlic, stock and any of that, let the natural vegetables and added salt bring out the flavour, it works. I have experimented, I have made bolognese sauce so many times experimenting, it only started to resemble the correct flavour when *REMOVING* things. Stick to the basics! Do what the Nonna's do! Keep it simple and you are already streets ahead. That's Italian cooking... of course it's different if you're making a curry or whatever... then nothing I have said here applies, but for Italian - don't "spice it up" and mess with the traditional recipes. These Italian recipes are the way they are and they are traditional for a reason! Don't start tampering with 100+ years of Italian recipes. You won't make it better, just stick to the traditional methods!

"Darkest Leeds" boy Marco's culinary skills, unfortunately, are as pretentious as his name and "fake" clipped Germanic Windsors-esque accent. He has no middle ground to his cooking. His preparations are confused and questionable, and he has a tendancy to under-cook. Then again, as they say, "God loves a trier". Marco can attribute the "Michelin stars" he has to the talented chefs he employs.
