    The Oxford Dictionary's definition of ketchup is: "a smooth sauce made chiefly from tomatoes and vinegar, used as a condiment." There are other tomato ketchup recipes from this time period that used anchovies but no vinegar so they would seem strange by modern tastes. This was the closest real ketchup-y recipe I could find from the time period. Did you know that tomatoes (and potatoes!) are native to the Americas?

      By the way! I'm excited about our next video coming out next week. We found an 1824 recipe for curly fries published in Virginia. You read that right. Curly fries?!? When you google "when curly fries were invented" it says that Arby's first introduced them but that's hilariously untrue and curly fries had already been around before the 1980s anyway when Arby put them on their menu so how can that be true. Curly fried potatoes were recorded in Europe as early as the 17th century. Though potatoes are originally native to the Americas it was European immigrants who passed on the technique of deep frying potatoes. Potatoes fried in lard started to became especially popular in the mid-late 18th century and may have even been sold by street vendors in France around the French Revolution but it's widely accepted that the Belgians (at least what would be modern day Belgium) are responsible for frying the first potato wedges.

    To think of the amount of work that went into every single meal back then! Not just what we are seeing Justine doing in her cabin right now but the labor of chopping wood and keeping both those fires going, the fact that that hog would have probably been raised and butchered on that homestead or at least traded for with some other commodity made by one's own hands, the vegetables had be grown, and on and on it goes...this really makes me appreciate all my modern luxuries! We have no idea how good we have it, and yet this channel makes me pine for a simpler time...

As a huge fan of gastronomy Ive always been curious about how food was back then when all ingredients were all natural with no artificial stuff.     If I was in the 1820s, even then this would have been my favorite dish. Those fries in particular look really delish, especially with that sauce.

    Justine, the french fries were so perfect that I would forget about the pork steaks! Yum! Frying things on a fire is pretty tricky sometimes and you made it look so simple as usual.

    I have enjoyed your videos for such a long time but rarely do I comment, they’re so helpful to me in terms of my anxieties as well as the fact I’ve always had an interest in colonial America.     Thank you for the video. A little advice about cooking your meat: add salt BEFORE (to keep water inside the meat = tenderness) and add pepper AFTER (to avoid burning this delicate spice) 😉

    How I love fried potatoes, otherwise called "French Fries" in the U.S.A., or "chips" over in Great Britain. The only ketchup I use is Heinz. I'd love to make your version, but I've always hated the seeds and "jelly" inside tomatoes. So I'll cut up and rinse the tomatoes of their seed and "jelly", then pat them dry before cooking.

    Seasoning for pork and chicken: salt/pepper/oregano/garlic powder. Steak takes just salt/pepper/oregano, all before cooking.

    The receipt for the potatoes reminds me more of the Potato scallops my Father used to make. The potatoes were peeled and sliced into rings then fried in butter till golden. Alternatively they could be dipped in batter and cooked in beef dripping. His family (in Lancashire in England) have been making this recipe for at least 200 years. My Father was 94 when he died last year and his Great grandmother made the receipt as well.

    I sometimes make my own ketchup with tomato paste, diced tomatoes, garlic and a few tablespoons of honey for sweetness. Blend it up, tastes just like store bought ketchup and much healthier especially because I use raw honey

      I did find a recipe for potato dumplings from the Civil War era online. Now I just have to see if it was also around in the early 1800s.

    I'm wondering why the receipt called for salting the pork when it was almost done and not applying it before with the pepper ?
    Also I'm going to try that "ketchup" receipt.. I'm not big on the sugary kind. Might add a dash of honey though;)

    I think it would be cute if you guys did a video reenactment of an odd situation that took place in Ste. Gen area. I don’t have any specifically lol I’m from Millersville. But anyway I bet there are some odd ones in some of those books.
