The single spice/herb that mixed with pork gives me the "sausage vibe" is fennel seeds, lots of them. Fennel and pork meat it's like they were raised to be joined together 😂

M&S do sell Italian sausage links but at a premium price when they are available - they tend to disappear from the shelves around the festive period, when shelf space is allocated to other seasonal products, so this recipe is most gratefully appreciated. Unfortunately I don’t have a sausage maker so will have to forego the ‘links’ presentation & cook up either as meat balls, patties or attempt to copy the Scottish sliced Lorne type block, do you think that would work Rik?🤔 As always thank you & hope you’re having a great weekend, we’ve just exited a 5 day artic blast 🥶, & back to pouring rain & forecasted strong winds!🙄🏴 Take care xx 👨🏼🍳👌👍💕
I don't know if this would appeal to you but Amazon (US) has silicone sausage molds-maybe UK does as well. They look like ice cube trays with long cavities and a lid. They're around $13US so it's a little bit of an investment. The other alternative is to shape the link and wrap in parchment and twist the end like candy and steam in there. You won't get the snap of the casing but you'll have the right shape to fit on a bun.
Awesome! Lately ground pork has been ridiculously priced here... but when it comes down I am making a bunch of this! I'll make some up as meatballs and freeze them... and vac seal some as patties for sandwiches.l.. and vac seal some just as ground meat ready to go. I love that I can freeze it cooked or uncooked. Love my vacuum sealer! Really saves time when my kitchen is 45F and I don't want to be out there! lol Shirley in NH

Thank you for the substitution meat mix. I purchase meat from a bulk supplier that does not stock much pork regularly, except bacon and breakfast sausages for the restaurant trade. However ground turkey thigh meat has become a stocked item. Ground beef has long been stocked. I am looking forward to my first 50/50 cooking adventure.
I would like to ask you a question,I know if you mix minced beef a lot it goes not exactly hard,more solid,and tough,so what about pork,you said to mix till sticky,will the sausage meatballs still be tender? I see a few other British cooks,and I know their hamburgers,and meatballs will not have a good texture, but I think it is the texture they are use too,I think how much they would enjoy a burger that was gently pushed together, and not beaten up.😊
Agreed! The more you mix the firmer the meat. You can mix it all through and have softer meatballs. Or even use a binder like milk powder in this recipe it would be 50g. That will do the job with firm texture. Thank you. Best, Rik
Sir, is it possible to make a *good* whole-wheat loaf in an 8x4x4 Pullman loaf pan? I don't know how much flour to use not to make a brick. Also, do you ever use silicone kneading bags?

I've never used milk powder I've always used breadcrumbs but I'll give it a go
