Look, just because Goku has fought very powerful opponents does not prevent Saitama from fighting and defeating equally powerful opponents in his universe, if you actually follow the One Punch Man logic, it does not matter how strong Saitama's opponent is, Saitama ALWAYS wins.
In my opinion, Saitama stomps any version of Goku anytime, anywhere and in any form.
In terms of actual feats shown by both characters, the winner is obvious, Goku, but that does not mean Saitama is weak. Fun fact, Saitama has never lost any battle, if you didn't know, now you do.
