- Rhubarb Meringue Cake is one of the two most baked rhubarb cakes we make in Germany. The contrast of the sour/tart-tasting rhubarb and the sweetness of the cake and meringue creates a heavenly taste! We also bake this cake as a version with fresh red currants in summer instead of the rhubarb.

My wife has to try this recipe. We have rhubarb pies and we have the pie filling as a sauce on the side, like apple sauce at times. She cans a couple jars a year. This recipe looks like a good, new way to have it. I've never seen vanilla like that, looks like a thin paste. Glad to see you back and hope you had a good rest.

I love this channel, and I've done a few recipes from it. Thanks for making these videos. Now, I listen to them with headphones and I have notices that in some videos the Left and Right balance for the sound is off; the volume is higher on the left side. Is it just me?
I just want to say thank you for these videos, I often have a lot of pain as I do particularly this morning and your videos offer some distraction from the pain. I’m not really a merengue person but I do love rhubarb. I have recently planted a new rhubarb plant but I suspect it will be a way off producing decent quantities, do you know if rhubarb needs to be blanched before freezing? We can’t buy frozen rhubarb here and at $6 per bundle and you really need two, it’s rather expensive to buy fresh at our supermarkets when it’s available.
I hope you are feeling better! The rhubarb that I bought frozen was completely raw so I think you don’t need to blanch it before freezing. Just cut it and put it into freezer bags.
