I admit I like the character as a character. She is at least as entertaining as anyone else, her jousting with Sheldon is funnier than Penny or Howard's sarcasm and she is more sympathetic than most characters - I would take her as a friend over Penny and Howard. She is less complicated than Raj and Sheldon. Yes, she could have been more tolerant, but... The hypotheses thing is an obvious analogous to religious/ideological differences, and truth is, many people deal badly with those in long term relationships. Actually, a good reason for people getting to know each relatively well before making a commitment like marriage and raising children together is to know what to expect and identify possible dealbreakers. Also, it is besides the point, but she is the only one who actually provides a shadow of an argument about the validity of one of the hypotheses.

I missed this vibe from the show and this video shows why early seasons were so well received. Biggest difference is that it was actually about scientists and their quirky habits and interests and way of life, not some useless and obnoxious waitress hogging everything and somehow landing a ridiculous job without any experience or education, and then complain about their marriage for "settling" and we just have to accept that all the hobbies and collections are useless and for the "losers" and should be thrown away like garbage. The show turned way too toxic towards the end. Not really, in this instance, Sheldon wasn't wrong, Leslie was going overboard by saying stuff like "WHAT about our kids?!" when they're not even married.
