Don't try it at home if you are not sure of the quality of your eggs. Even when the egg is "cooked" because of the hot rice, there's still the risk of salmonella infection. Japanese's egg industry is top quality and follow a very strict sanitary standards, so the probability to get ill of salmonellosis is nearly zero.
If you ARE going to take the risk. Definitely be sure to rinse your egg in hot water IMMEDIATELY before cracking it. It won't get rid of all the bacteria, but you're dramatically reducing the amount that might transfer from the exterior, where a majority of it lives.
