Resorts World in Las Vegas has an ALL-Vegan Brunch and restaurant called Crossroads. This video shows all of the brunch items. My favorites were the French toast, bacon and the lemon cake. I made sandwiches with the French toast and bacon. I believe the bacon was made with seitan. It melted in the mouth and was perfectly salty and smokey. It went well with the maple syrup. There was also a spicy maple syrup with fennel and cayenne. It has a good bite.
