I don't know how well it would look, but you could try using green or lime unlit candles instead of the seagrass? and bamboo would probably work well as well, just make sure to stop it from growing too tall with something, probably string?

Because the gold eyes for the nether one made sense because the nether is the best place to get gold, but for the overworld it should be like diamonds I think.
