HOW TO: Freeze & Store Bread (July 2020)

  • Sourdough bread like most bread freezes extremely well and when done properly means we can enjoy our sourdough even when we are too busy to bake. It is also a fantastic way to avoid waste.
    Until recently I wouldn’t consider freezing my sourdough bread. I liked the idea that we had an abundance of freshly baked bread at home. But the reality was a little different, sometimes I was too busy to bake, but what worried me more was the amount of waste.

      Galaxi 7 I pre-slice my loaf before freezing sometimes. Best way I’ve found to use them quick from the freezer is to put in the toaster on the lowest possible setting. Doesn’t really toast the bread but it softens it.

    • @henryhunterjr
      @henryhunterjr  4 ปีที่แล้ว +6

      When you take your bread out of the freezer placed it on the counter leave it in the bag just open it to allow it to breathe and not sweat. Most loaves should take no longer than 20 minutes depending on the temperature in your house. A slice of course is much quicker. Whatever you do, don’t put it in the microwave. It’s always best to toast bread or place the whole loaf in a preheated 350°F oven for 15 minutes after it has been frozen it brings back the flavor.

    I only freeze sliced whole meal seeded packaged bread. I separate/space the slices in the bag, freeze, and then when I want a slice, I can easily separate each frozen slice and STEAM the slice, to bring it back to just baked fresh.

    Great video Henry! I am now using my Food Saver to freeze my bread. I flash freeze it first, then put it in a food saver bag - either measured out or the gallon size zip lock bags they have. Works great but I am going to follow your plastic wrapping as well. Thanks so much for the tips on this! Greatly appreciated.

    • @voidremoved
      @voidremoved 3 ปีที่แล้ว +2

      is it that important? We really need to reduce our plastic usage, if you are using the bags. I am not fussy and its only for me, so i freeze the bread in a bag that is not sealed, if i bought it, the bag it came in and if i made the bread i have a bag i reuse. I have a food saver but feel guilty to use it. Only using it for my expensive medicinal butter and flowers. Too much plastic not good. Impossible, we cant use this much plastic, everyone of us for every loaf of bread. I'd rather take a cotton bag to the bake shop to buy the bread

    • @judykish1481
      @judykish1481 3 ปีที่แล้ว

      @@voidremoved Appreciate your comment. I'm a huge proponent of all recycling and I reuse my food saver bags as well. The plastic designed for freezing is critical to how it protects the food when in the freezer and the food saver unit does a great job of removing the air so condensation keeps it from getting freezer burn. So far, my frozen storage using the Food Saver has more than tripled in length of time, which is great. Food stays as fresh as the day I froze it. So much better than regular plastic.

  • @Lisa-ym1si
    @Lisa-ym1si 2 ปีที่แล้ว +2

    I just got my first loaves of real bread from a bakery and I put them in freezer bags for the freezer - should I not be using freezer bags? But instead put them in those thin bags that they came in? The bakery pre-slices them which is helpful for a single person since I can only eat up maybe four slices in three days.

    • @henryhunterjr
      @henryhunterjr  2 ปีที่แล้ว +1

      You can use freezer bags and certainly a heavier bag would be best. You can freeze your bread for months. Just let it defrost on the counter, open a little so it can breathe and not get soggy from the condensation. It's also a better idea not to have it sliced and to buy a bread knife or something serrated. Sliced bread has more surface area obviously and it will dehydrate faster which is what causes bread to go stale.

    01:15 Wouldn't taking out of the bag will make the soggy anyway? The right procedure would be to put the bread in the bag, keep, the bag open for a while, while in the freezer, so all the moisture in the bag disappears. (The freezer is below 0°C/32°F so the air there has no moisture). Then tie or close the bag. Now bread in surrounded by air with no moisture. Now thaw the bread while it is in the bag. No more soggy bread.
    Thanks for the video.

    • @henryhunterjr
      @henryhunterjr  4 ปีที่แล้ว +2

      I’m embarrassed that it’s taken me this long to get back to you. I apologize.
      The plastic bag most of my customers use is the one I bag the bread in. It’s a little stronger than a grocery store bread bag but not much. You can also store your bread and gallon size Ziploc bags. You just don’t want moisture to escape. The little bit of moisture that still exists will freeze quickly. I keep bread in the freezer for months. I just did a video on what I took out of the freezer yesterday should be posted tomorrow. Now when you take it out and defrost it leave it in the bag cabinet in and leave it on the counter opened until it reaches room temperature. That won’t take long. To reheat an entire loaf, preheat your oven to 350° and place your bread on a rack for 15 min
