🇲🇽BLUE TORTILLA: Pour water into the pot and put it to boil. Add limestone when the pot is boiling. Add corn and allow it to continue boiling for 30-40 minutes. After, grind the corn in the machine and hand knead into a dough. Add to the next machine which kneads it and flips the tortilla three times. It flattens it and heats it.

🇲🇽 GORDITAS CON TROMPO: In a huge pot, add water and raw meat with lard, spices, garlic and salt. Allow it to cook for 2.5hrs. | Gorditas: Knead dough and round into a ball. Stuff with ground chicharrón (fried pork belly/rind) and then flatten. Place on grill and flip until golden brown on both sides. Cut the center and stuff meat inside. Top with herbs and onions and serve. Serve with salsa verde (green salsa), salsa rojo (red salsa) and lime.

🇲🇽 TAMAL ROSITA: In a mixer, add butter. Add sugar. Add baking powder, food colouring and lard. Add corn flour. Add water. Continue mixing until it becomes a sticky dough. Pour the dough into a tray and take it to the assembly line. Open the corn husks and add the dough, then add raisins and fold them closed. Add to the steaming tray and then add to the steamer.

For all those people who think we have too many dry dishes: The problem is that most of these dishes are somewhat dry, but if you pay attention it only happens in fast food and on the street, the reality is that we have a LOT of really juicy dishes, but they are not tacos or garnachas, they are dishes which are called Guisados and are similar to stews but in our Mexican version, many with "adobos", other flavors, etc (apart from Moles). Many of these meals are homemade and made in specific little villages and "Pueblos Mágicos" and restaurants with "Comida Típica" (Dishes from regions and cities, many of them by families, the culture of each different state of Mexico, indigenous people and food traditions).

I moved to the USA from Mexico City when I was 9 yrs old and I still remember I loved eating a fresh tortilla with salt whenever I would go to the tortilleria with my older brother, good old times at least from what I remember of my childhood in Mexico. I wanna go back just for the food>.

The pink tamales in San Luis Potosi, in the lil villages . We call them sweet tamales. My aunt use to make them and now sales them here IN FREDERICK MARYLAND on Saturdays and Sundays. ( pork ,chicken and all corn )
