My granny made very few sweets except at the holidays she was too poor to have the ingredients. But she made fried pies. She could always find some fruit from farmer friends and had everything for her dough She put nothing on top of the pies so the plain ones are my favorite. You remind me so much of her just with your gentle speaking. She was one of kindest people God put on this earth. I was a young teenager when she passed but I think remember and am grateful for what time I had with her every day
@@CelebratingAppalachia I had a couple jars that didn’t seal. At almost 3 AM this morning I was delirious. I finally fell asleep at 6:30 AM. I opened a couple of the jars that didn’t seal and it was so amazing. I made half plain with sweet peppers and mild banana peppers. Then I made a hot version with sweet, jalapeño and mild banana peppers. I was gifted a bunch of jalapeños, and other peppers, and I went way overboard. They are hotter than fire. Somebody will love the hot stuff but next time I’m gonna make a lot more plain. Now I can make some Crowder peas that I bought a month ago. I also want to try the cucumber version to the mix. I’m passing a couple jars on to the Farm market that donated all the goodies. I gave them $20 but that was not the real Value. I’m going to pass your recipe onto them.
My grand-dad built hinged drying screens, with window screening on the bottom and the top. We raised the top filled the screen tray with fruits or whatever we were drying, then lowered the top and placed the filled drying screen on saw horses in the sun. At night, the trays were moved into the smokehouse and brought out the next morning. My granny canned tomatoes pretty much the way you did, other she added a little vinegar or fruit fresh to each jar to make sure they were acidic enough to not need pressure canning. She never water bathed; she used hot pack method: hot product into hot, sterile jars, capped with hot sterile lids and rings, left to cool and seal.
Tipper, You're the genuine article in all ways that count.. I think we all appreciated the honest face you made when you tasted the spicy tomatoes. A great thing to do with the pulp after you Juice your tomatoes is to puree it, and place it on some parchment paper in a thin coat and dehydrate it and powder it. We add some to a can of tomatoes we are using and it bumps up the flavor and richness, esp with our Cherokee purple and sun gold. Then there is no waste as well. I have even added powder to things that call for tomato paste, and it worked well.
Tipper, you can your tomatoes EXACTLY like my mama did. No water bath or pressure. Was waiting for you to say 1 teaspoon of salt in each quart. When you did, it brought a smile to my face. Canning tomatoes was my favorite thing to help her can. Would always keep some tomatoes to add to some fresh corn. I sometimes add grated cheese to my tater cakes and was wondering if you do? Really enjoyed today's video.
I thought about dehydrating fruit but I am too lazy. We have an amazing fruit and veggie store that sells homemade dehydrated fruit veggies, at a very reasonable prices. Have a great weekend Tipper and family!❤️🙏🇨🇦
My mama & Granny always dried apples, usually outside on a screen but seems like they put some kind of cloth over then, muslin maybe…not sure but I sure did loved those fried apple pies…both granny & mama canned tomatoes, tomatoes & corn together (for soups) and lots of tomato juice…my daddy loved eating saltine crackers with glass of tomato juice ( especially, if he wasn’t feeling well)….thanks for always bringing back awesome memories for me.

The apple peeler is a great tool and my son bought me a potato peeler. Same principle but battery operated and the potato is vertical. I have arthritis in my hands and it was difficult holding potatoes to peel them. This is a cinch.
My mouth was watering while you and Matt were sampling the fried pies. I even got the giggles when he said that he was your Sugar Daddy 🤣. I love fried pies and potato cakes! I have tried more times that I can count, and I just can't make them as good as my Mama did. She was such a good cook, and her chicken and dumplings were one of my favorites, among other things. You make it look so easy and yummy, Tipper. 😊 It was so great getting to watch how you made everything. Enjoy all your yummy food with Matt and all your family. Sending blessings to you all. 💗
Lot of good memories. My mother and grandmothers dried apples every year. Sometimes on old screens and sheets out in the sun or in the rear window of our car while momma was at work. Grandmother always made apple stack cakes and momma was famous for fried pies. At church dinners lots of people would slip over to the dessert table first to make sure they got one. I taught with a family friend for years and momma sent pies by me once for the friend's family. My friend kept the pies at school instead of taking them home.
My grandma had big wooden frames built with screen…..a duplicate attached with hinges that closed them up. She but this out in the morning and brought them into her garden house at night. I think there were about 15 of these about the size of a normal house window. WE all had to help with all the fruits she dried…..apples, pears and peaches! A lot of work but so worth it. Her apple cakes with those dried apples were the best I have ever eaten!

Takes me back to my childhood. My Momma made the best apple fried pies. I loved them. My great aunt would dry the apples on big sheets of tin that were resting on saw horses. Then we put them in a bread bag and froze them. Then during the winter we would have fried pies. Oh I can remember the taste and it was delicious. I think my Daddy loved them even more than I did. We were visiting my Dad's people in MS, and as we were leaving, Mamaw Pearl gave my parents a large bag of dried apples. My Mom made fried apple pies when we got back home. I still can see her in the old kitchen and remember how wonderful they were! Good memories!❤
I used to juice and used to pulp to add fiber to bread or muffins. I would be as big as a barn if I lived with you. My family is from TN and Im familiar with that fabulous food. You are amazing!😊

Dried apples will be a great snack for 2 little toddlers in a couple of years. And almost every child likes apples. A friend of minectold me about shredding the butter. She shreds it ahead of time and then sticks the bowl back in the fridge or the freezer. That way she can have that part done and just use it when she is ready.
Hi Tipper and Matt! I've made homemade pies and I bake them in the oven. Then I make powered sugar glaze. Mmmmmmm it's sooooo good! I have only made the peach and apple. They're both very good. Oh, guess what I made? Lol! You're sweet pepper jelly! This is a first for me and my family. I processed 10 1/2 pints and 2 pint jars. I have really liked this spread on toast. It's pretty yummy
I have my Excalibur in our Wood Shop. I loaded it with small halved tomatoes today. I have a couple of wash pans full of bigger ones as well as some peppers and Jing okra. You can let Matt know you are creating new “Okry Snobs”! LOL I have a nice glass of red wine, the supper dishes are done and my feet are up. I’m about to enjoy your cookbook. If summer is busy, like this year with the wedding coming up next week, I pop my ripe tomatoes in the freezer. Then one winter day I take them out, as they thaw, the skins slip right off. Then I put them in a strainer and drain off the liquid which is the tomato juice. Then mash or puree and can the puree and the juice if there is enough of it. My mother made potato cakes and I made them for my family. So good.
My grandma also baked her fried pies, I never knew if they were calling them fried apple pies because the apples were fried or the normal way to fix them was to fry them. The dough on hers was very soft and thin, I have never been able to figure out just exactly how she was making the dough. She would make a big batch for my birthday and I would hide them from my sisters. If the weather was good she'd make me a chocolate pie with meringue, she wouldn't bake them if it was raining because she said the meringue wouldn't set up right.
one of my most favorite things, Fried pie. Tomatoes, my uncle bud made Ketchup, it’s more like a chili sauce, but oh my it was delicious in fried potatoes. i wish i had that recipe.what we don’t know when young!
I have canned and frozen things for many years. I found the best and quickest way to do tomatoes is to wash, core and blend tomatoes with skin all together then freeze or can. Can't tell after blending that the skin was left on.
My grandmother made canned tomato juice, canned tomatoes and canned tomato sauce. She also made canned tomato sauce with hot peppers and sweet peppers (Italian recipe though we are not Italian just lived in an area where lots of Italian immigrants settled to work in the coal mines). Loved all her canned foods!! My parents used to drink tomato juice as an appetizer before dinner. It was a great appetizer. She and my Mom made all kinds of pies and cakes but I don't remember them ever making hand pies. I have had store bought but I know homemade is infinitely better!!
My boss grows lots of tomatoes. He just throws his in freezer bags whole and then skins them after he goes to use them for chili, soup, spaghetti or any cooked tomato dishes. They make such a good fresh flavor for winter cooking.
My Grand mom would bleach apples , by using sulfur smoke. That's a job also.We learned the hard way that my daughter was allergic to sulfa . She ate so many and broke out in a terrible rash. She was 4. No more bleached apples for her . Thanks for sharing Mrs Tipper ❤
I could just taste those fried pies. I would have liked either one of them. I know you had to be worn out but that’s how we do trying to put up our bounty. I can remember my mom drying apples and making fried pies. Wonderful memories. 😊 Do you all like salsa? That would be a way of using your tomatoes.
The apples looked so good and will be delicious to snack on this winter. I can’t believe how many really good size tomatoes you still have coming off your vines. Mine dried up and died by the end of August. I do still have one plant that’s still producing small tomatoes, but they are starting to trash them.. Them pies look delicious too! Enjoy them all!

Oh does this bring back some wonderful memories! My Mama used to make fried pies & we loved them! She & her twin sister actually started a little side business of selling their fried pies to local businesses when I was younger. She made apple, peach, sweet potato & lemon! Spent many a summer afternoon shelling peas, stringing and snapping beans, and shucking/ sulking corn at my grandma’s house after she’d spent the morning gathering the bounty from her garden ( it was HUGE!!! )LOVE YOUR FAMILY, Tipper& Matt. Always look forward to the newest uploads❤ ❤️

My momma and granny would dry their apples in the back windows of old cars. Then, they would make fried apple pies. They were soooo good! They've passed on, and so have the fried apple pies. Thank you for the video.
I so enjoy watching your channel. My husband loves fried pies. We've been married almost 43 yrs and I don’t believe I've ever made him any. His momma use to make them for him. I may surprise him this weekend and make him some. I have some apples & peaches in the freezer. I hope to meet you and your family one day. Ya'll aren't far from my daughter in Blairsville. Love my old Excalibur dehydrator. It’s a tank! I still have the round Nesco I started with, that I use for drying onions in the garage. I dried seven quarts of apples so far this season, I dry everything over night. Mine are crispy and vacuum sealed in mason jars. I eat some most mornings, broken up into old-fashioned oats before cooking. This week I canned nine quarts of apple pie filling. I get fresh apples by the bushel or half-bushel from a local orchard.

That dehydrator is good at drying citrus slices to hang in the window at Christmastime, too.

If you don't grow the fruit/vegetables or have them given to you, it's not worth it in terms of cost & time.

You can brush them with oil and put them in an air fryer too they come out delicious

Dried apples will be a great snack for 2 little toddlers in a couple of years. And almost every child likes apples. A friend of minectold me about shredding the butter. She shreds it ahead of time and then sticks the bowl back in the fridge or the freezer. That way she can have that part done and just use it when she is ready.
Hi Tipper and Matt! I've made homemade pies and I bake them in the oven. Then I make powered sugar glaze. Mmmmmmm it's sooooo good! I have only made the peach and apple. They're both very good. Oh, guess what I made? Lol! You're sweet pepper jelly! This is a first for me and my family. I processed 10 1/2 pints and 2 pint jars. I have really liked this spread on toast. It's pretty yummy

I have my Excalibur in our Wood Shop. I loaded it with small halved tomatoes today. I have a couple of wash pans full of bigger ones as well as some peppers and Jing okra. You can let Matt know you are creating new “Okry Snobs”! LOL I have a nice glass of red wine, the supper dishes are done and my feet are up. I’m about to enjoy your cookbook. If summer is busy, like this year with the wedding coming up next week, I pop my ripe tomatoes in the freezer. Then one winter day I take them out, as they thaw, the skins slip right off. Then I put them in a strainer and drain off the liquid which is the tomato juice. Then mash or puree and can the puree and the juice if there is enough of it. My mother made potato cakes and I made them for my family. So good.

My grandma also baked her fried pies, I never knew if they were calling them fried apple pies because the apples were fried or the normal way to fix them was to fry them. The dough on hers was very soft and thin, I have never been able to figure out just exactly how she was making the dough. She would make a big batch for my birthday and I would hide them from my sisters. If the weather was good she'd make me a chocolate pie with meringue, she wouldn't bake them if it was raining because she said the meringue wouldn't set up right.
one of my most favorite things, Fried pie. Tomatoes, my uncle bud made Ketchup, it’s more like a chili sauce, but oh my it was delicious in fried potatoes. i wish i had that recipe.what we don’t know when young!

I have canned and frozen things for many years. I found the best and quickest way to do tomatoes is to wash, core and blend tomatoes with skin all together then freeze or can. Can't tell after blending that the skin was left on.

My grandmother made canned tomato juice, canned tomatoes and canned tomato sauce. She also made canned tomato sauce with hot peppers and sweet peppers (Italian recipe though we are not Italian just lived in an area where lots of Italian immigrants settled to work in the coal mines). Loved all her canned foods!!
My parents used to drink tomato juice as an appetizer before dinner. It was a great appetizer.
She and my Mom made all kinds of pies and cakes but I don't remember them ever making hand pies.
I have had store bought but I know homemade is infinitely better!!

My boss grows lots of tomatoes. He just throws his in freezer bags whole and then skins them after he goes to use them for chili, soup, spaghetti or any cooked tomato dishes. They make such a good fresh flavor for winter cooking.
My Grand mom would bleach apples , by using sulfur smoke. That's a job also.We learned the hard way that my daughter was allergic to sulfa . She ate so many and broke out in a terrible rash. She was 4. No more bleached apples for her . Thanks for sharing Mrs Tipper ❤

I could just taste those fried pies. I would have liked either one of them. I know you had to be worn out but that’s how we do trying to put up our bounty. I can remember my mom drying apples and making fried pies. Wonderful memories. 😊 Do you all like salsa? That would be a way of using your tomatoes.

The apples looked so good and will be delicious to snack on this winter. I can’t believe how many really good size tomatoes you still have coming off your vines. Mine dried up and died by the end of August. I do still have one plant that’s still producing small tomatoes, but they are starting to trash them.. Them pies look delicious too! Enjoy them all!

Oh does this bring back some wonderful memories! My Mama used to make fried pies & we loved them! She & her twin sister actually started a little side business of selling their fried pies to local businesses when I was younger. She made apple, peach, sweet potato & lemon! Oh what I wouldn’t give for one of her fried pies today!! She’s been gone for a few years now. Thank you for sharing your videos & stirring up such wonderful memories of my childhood!

I so enjoy watching your channel. My husband loves fried pies. We've been married almost 43 yrs and I don’t believe I've ever made him any. His momma use to make them for him. I may surprise him this weekend and make him some. I have some apples & peaches in the freezer. I hope to meet you and your family one day. Ya'll aren't far from my daughter in Blairsville. Love my old Excalibur dehydrator. It’s a tank! I still have the round Nesco I started with, that I use for drying onions in the garage. I dried seven quarts of apples so far this season, I dry everything over night. Mine are crispy and vacuum sealed in mason jars. I eat some most mornings, broken up into old-fashioned oats before cooking. This week I canned nine quarts of apple pie filling. I get fresh apples by the bushel or half-bushel from a local orchard.
Great video!! You could put aside a quart or two of tomato juice to make chili…deer chili. If you get snow, it would be a special occasion.
