Interesting to know they have another name in South Africa. I've never tried them with apricot jam, will have to give that a go next time I make them. Sorry to hear about your dad, I lost mine a long time ago too.

You could leave the egg out of the pastry and just use water. I'm not really sure about the filling, you could possibly try mashed silken tofu, or mashed banana, or 'free and easy egg replacer' which is vegan, available from ocado.
You can fill the pastry case with mince if you want, though you won't get much in and I'm not sure how well the coconut topping will go, but feel free to experiment, and let me know if it's any good.
I have only ever made them with desiccated coconut. I would imagine fresh coconut would introduce more moisture, so you will need to experiment a little. Please note that I am not a professional baker or cook.

You can always leave it out if you prefer though.
