    I have bought the firebox as well , I have used it with the snake method 2+1 , I have started the fire and put the lid on when I had 6 to 8 briquettes lit , it took 90minutes to get up to temp of 225F , once it got there and the whole box was completely warmed up it was very easy to control the temps , i kept it between 225 and 250 , it ran for about 9 hours from lighting to when I took the short ribs off with great results and got about 25% of the briquettes left at the end , so I would say you could easily do a 12- 14 hour cook , especially if you use a 2+2 snake , then maybe 16-18 hours of low and slow. I am not very experienced , but it seems very practical and economical as far as fuel consumption , the other thing I noticed was the fact that after the cook I shut the wents completely and after 2 hours of sitting outside in only 3 degrees Celsius which is 37F the kettle was still luke warm on the outside which tells me the heat loss is a lot less with the firebox , when I have done the same test without the firebox and much warmer 15 degrees Celsius/ 60F outside the kettle was completely cold in less than that.
    In my opinion , its definitely a good addition and not a gimmick for a fraction of the price of a kamado style cooker , next time I will try the minion method and see if it takes less time to heat up as the heat source will be right under the deflector stone and the heat won't bypass it on the side , or start the snake with more lit briquettes.

    P.s , it lets me use most of the surface of my cooking area , and I had space for a inch tall round stainless steel drip tray between the stone and grate that was the same size as the deflector stone that I filled with hot water for moisture and it kept the firebox clean of all the grease as well.

    I just purchased and tried it along with the OF smoker chamber attachment and the spider venom. WOW, the three are a great combo, made a few ribs and the bark and tenderness were amazing. I set the temperature at 250 and it rarely fluctuated, when I opened the chamber the temperature would set within minutes.
    I did not use a water pan, not sure if I need one but I will try it this week. I would recommend all three products if you already have a kettle and want elevate it.

    You're a wealth of knowledge! I just picked up the onlyfire pizza/rotisserie and i love it, including those clips.
    I will bbq into the winter up north, if can be tough to maintain decent temps and i fly through fuel compared to summer. Ill have to try this out.

    I just discovered your channel and I didn't have a clue about diffuser plates for the Weber Kettle till now. This is something I will be researching. I'm "up here" in Eau Claire, WI and use the Slow n Sear along with their Drip n Griddle pan which I love.
    The Drip n Griddle pan would work great with the diffuser. It would keep grease and liquids from dripping down into the Weber. Heck, I could buy another drip n griddle pan and cook more foods at once. Never enough accessories for the Weber!

    What do the ceramic inserts do? Is it strictly for insulating the charcoal from losing too much heat over time from the bare metal of the stove?

    I would buy another if it were made like my parents 1949 model. Heavy gauge spun metal cover and base, Legs were enameled pipe welded on. They never fell off when you picked it up or moved it. ..
    I was outside for 20 years with no cover . Now they been attacked by they cost cutters and they are junk.

    I’m tempted, I suppose you could leave the lower bit in all year round (without the top plate) and use it as a normal hot grill too? Can’t see it using up too much space and sacrificing and room on the grill

    I still love that orange color, but i am very happy with my grey 70th that Sinterklaas and Black Pete brought bij steamboat from Spain. I tried it between xmas and nye on pulled pork and I had some difficulties with the temp. Recently my daughter turned 6 had the family over, weber just on and the weather turned on us, again the temp zonked. Brother in law mentioned kamado and I said hearing about this product. How is it working for you, do you use it much? Kamadojoe kettle joe (yes I just cursed) has a similar set up with mixed reviews. Is this worth an upgrade?

    I love your vids, Tom! You're really tempting me to get out my old Weber Kettle with this Komado Style insert! Looks like the snake would go 12 hours! I have the original Ash (bowl? Plate?) on it, but I would love to have one with that cup/handle style. Is there a kit to make that change, so I don't have to buy a new one?

    Hi Tom. I’m a newbie to BBQ’ing - only used my 22" Weber the once and recently purchased the firebox. Intend to use my firebox for the first time this week to cook a couple of 5lb pork shoulder joints. I’ll try the snake method - just wanted to check if you kept the bottom vent open for the entire cook?

    Great overview Tom! I've been waiting for something like this for a while, surprised it took this long to be honest.
    What I like: the fit of curved tiles within a wire frame is brilliant, keeps them all together, and the price tor this fit and finish is tremendous value; other companies would charge double if not more for the same thing.
    What I don't like: I wish they cut the tiles to be a bit shorter because the cooking grill needs to be raised. Sometimes I have a big cook and use a second raised grill, but the weber lid isn't that tall, so this puts food on that second grill higher up, either not fitting beneath the lid or too close to the lid, where it's a lot hotter, effecting the cook.
    Also, I've read those tabs that raise the cooking grill are not that secure and sometimes fall into the kettle.
    Tom, do you know if the weber char-ring and diffuser plate fits with these ceramic plates also in the kettle, with enough space to allow smoke to move through? I'm not talking about the flimsy heat controller that you have to put together but the setup they now call the "Low & Slow Kit" on the weber website. I'd prefer the ability to have the cooking grill at the original height with the ability to still fit a drip/water pan underneath, hence the diffuser plate.
    Love your videos and your down-to-earth demeanor!

    It is pretty sad that I now watch Tom Horseman before church, but the clocks went back an hour today for daylight savings and you bought the accessory I want to get for Christmas. My thinking behind the OnlyFire ceramic inset for the Weber (which is why I want it) is to continue to build out my Weber further as you saw in my home video (Inspired by the KJ Kettle Joe). So I am planning on not using the grate above the fire, but going, OF ceramic, OF plate setter, OF version of the slow roller, and OF smoke chamber. I am hoping it will preserve the charcoal which the smoke chamber burns through quickly, but because of the slow roller and the long barrel of the smoke chamber acting like a chimney, I will have excellent draw so fantastic convection. I hope that makes sense? If Santa delivers this Christmas I will link a home video so you can see it (I havn’t hung the chicken drums on the OnlyFire hanger I said I was going to do, but I will link that also to show you)! Tom, I noticed you opened the bottom vent and controlled it from the top. Most of us these days go the other way around. I have never tried it the way you did it and was wondering why you made that choice and what the difference is. I never tried as I worried it would reduce the draw and inhibit bark and smoke ring formation - it certainly didn’t in your video! What are your thoughts? Right, I’m off to church.

    Slick set up. Clearly the ceramic bowl heat with heat retention. I think you would have burned through all the charcoal without that basket.

      @larryboyer just ordered Larry, not really like the slow roller since it’s almost at charcoal level, intended more for infrared type cooking. We shall see.. Thanks for the tip!

      I use this ceramic insert setup with the spider venom and get some great results with longer cook times and very controlled temperatures even on windy days
